  • Crescent roll dough: if you can find it, use a Pillsbury crescent dough sheet, which doesn’t have the perforations that you’ll find in a regular can of Pillsbury crescent rolls. If you can’t find the sheet of dough, just use the regular crescent rolls and pinch together the seams.
  • Chicken: you’ll need cooked chicken for this recipe, and a variety of options will work. It’s a great way to use up leftovers, or to take advantage of store-bought rotisserie chicken. See my tips below.
  • Alfredo sauce: I use store-bought sauce for a shortcut, but you can certainly make your favorite homemade Alfredo to use here if you prefer.
  • Basil pesto: gives the chicken filling a more complex flavor. This is optional, but highly recommended. Use a jar of store-bought pesto, or make your own at home.
  • Grated cheese: just about any cheese will work, but we like the flavor of an Italian cheese blend. Other nice options include mozzarella cheese, Parmesan cheese, Monterey Jack cheese, and classic sharp cheddar cheese.

The Best Chicken to Use for this Crescent Roll Casserole Recipe

You’ll need cooked chicken for this recipe, and a variety of options will work. Pick the most convenient method for you:

  • Boiled and Pulled Chicken: Boil about 1 lb. of boneless, skinless chicken breasts or thighs until cooked through (about 15-20 minutes). When cool enough to handle, chop or pull the chicken. You’ll need a total of about 2 cups (more or less) shredded. I find that 1 lb. of chicken breasts yields about 2 cups of pulled chicken, but there’s some flexibility here — it doesn’t need to be exact.
  • Rotisserie Chicken: This is a great shortcut! Purchase a rotisserie chicken from the grocery store, shred the meat, and use in the recipe as instructed.
  • Leftover Chicken: If you have leftover grilled or baked chicken from a previous meal, put those extras to good use in this casserole.
  • Canned Chicken: Yep, you can even use canned chicken in this casserole!

How to Make Chicken Alfredo Casserole with Crescent Rolls

This recipe is adapted from our favorite crescent roll ground beef casserole, which I received from a blog reader many years ago. It continues to be a hit for weeknight meals! I’ve included detailed directions for this chicken twist in the recipe card below, but here’s the quick version:

  • Unroll the crescent dough and press it into a 13 x 9-inch or 11 x 7-inch casserole dish.
  • Stir together the chicken, Alfredo sauce, and pesto.
  • Spoon the chicken mixture over the crescent roll crust.
  • Sprinkle cheese on top.
  • Bake in a 350°F oven for about 20-25 minutes, until the crust is golden brown.

Preparation and Storage Tips

  • Store the leftover crescent roll bake in an airtight container in the refrigerator for 3-4 days. The bottom of the crust will get soggy as it sits, so this meal is best enjoyed immediately.
  • To extend the life of your leftovers, freeze the casserole in an airtight container for up to 3 months.
  • You can also freeze the casserole before baking. Thaw in the refrigerator overnight and bake as instructed, or (if using a freezer-to-oven-safe dish), bake directly from frozen. If baking a frozen casserole, keep the dish covered in the oven for about 20 minutes, then remove the cover and continue baking for 20-25 more minutes.
  • To reheat the casserole, cover the dish with foil and warm in a 350°F oven until heated through, about 15-20 minutes. You can also reheat individual squares in the microwave for about 30 seconds.

Ingredients
  

  • 1 (8 ounce) can Pillsbury crescent roll dough (I like to use the Crescent Dough Sheets, which don’t have any perforations)
  • 2 cups cooked, shredded or diced chicken
  • ¾ cup Alfredo sauce (or up to 1 cup as needed)
  • 1 tablespoon prepared basil pesto
  • 1 cup grated Italian cheese blend
  • Optional garnish: chopped fresh basil, parsley, or other herbs; crushed red pepper flakes

Instructions

  • Preheat oven to 350°F (180°C). Spray an 11 x 7-inch baking dish with cooking spray. You can also use a 9 x 13-inch dish — it will just yield a slightly thinner crust and chicken layer.

  • Unroll crescent roll dough and press into the bottom of the prepared dish to form a crust. Tuck the ends of the dough under as needed to fit the pan. Set aside.

  • In a medium bowl, stir together the chicken, ¾ cup of Alfredo sauce, and pesto. The chicken should be nicely coated in sauce, so add a little bit more Alfredo if the mixture seems dry. You just don’t want too much sauce, which can make the crust soggy. Taste and season with salt and pepper, if desired.

  • Spread chicken mixture in an even layer over the crescent roll dough. Sprinkle shredded cheese on top.

  1. Thank you for another versatile casserole which sounds really good. I’m glad the regular crescent roll dough will work. I never have been able to find the crescent roll sheet. As a matter of curiosity, does pie crust work as a bottom layer for a substitute for the crescent sheet in this sort of recipe? I can generally find that as well as regular crescent rolls. Just not the crescent sheet. Heaven knows why..

      A pie crust would likely work as long as the baking time is adjusted. The taste and texture will also change slightly as crescent rolls are softer and fluffier. Hope this helps!
