Homemade Biscuits

Biscuits are a way of life in the South, and every home cook has her favorite version. The ultimate goal is a biscuit with a crispy, golden brown outside, and a light, tender inside. Our ideal biscuits are puffy and tall, not dense or flat, and exhibit that hard-to-achieve cross between a tender crumb and flaky layers.

I’ve pulled together this convenient list of our favorite biscuit recipes, along with my best tips and tricks for making the simple goodies, so that you can enjoy the best biscuit recipes that the South has to offer — from the comfort of your own kitchen!

What are the 4 types of biscuits?

In general, there are four different types of biscuits. In this roundup, we’re focused only on the first two — rolled biscuits and drop biscuits. We’ll save the others for another day!

  1. Rolled Biscuits: In the Southeastern United States, “biscuits” are typically soft leavened quick breads, similar to scones (but not sweet), and made with baking powder and/or baking soda instead of yeast. They are traditionally cut out into rounds before baking in a cast iron skillet or other pan.
  2. Drop Biscuits: These are made by scooping biscuit dough from the mixing bowl and “dropping” it onto baking sheets — no rolling or cutting necessary. The dough is typically stirred together (instead of cutting the butter into the dry ingredients), so drop biscuits do not develop the same distinct, flaky layers that you find in more traditional rolled biscuits. They also don’t rise quite as high.
  3. Scones: A scone is a baked good made of wheat or oatmeal, with baking powder as a leavening agent. They are often slightly sweet (although savory versions also exist) and glazed with an egg wash. Scones are usually cut into wedges and made with both cream and butter. They’re baked on sheet pans and include any variety of mix-in’s — such as chocolate chips, nuts, and fresh or dried fruit.
  4. Shortcakes: These desserts use scones or biscuits as a base. The biscuits are split or served whole, and topped with sweetened fruit and whipped cream or ice cream.

The Secret to an Excellent Biscuit

If your ideal biscuits include tall, buttery, flaky layers, then you’ve come to the right place. After years and years of practice, I’ve learned a handful of simple ways to achieve those elusive mile-high treats:

  • Very cold ingredients are essential. Biscuits get their light, fluffy texture when cold butter expands in a very hot oven, creating pockets of steam. That’s why my recipes often call for freezing the cut biscuits for about 10-15 minutes before baking.
  • The oven must be very hot — usually between 425°F – 475°F. When the cold biscuit dough interacts with the high heat of the oven, the water in the butter and buttermilk heats rapidly and releases steam, pushing the dough upward. If an oven is set at a lower temperature (such as 350°F or 400°F), the fat inside the dough heats too slowly and melts before the biscuits can fully rise.
  • Folding the dough on itself multiple times builds visible layers.
  • Do not twist a round biscuit cutter — just punch straight down and pull it straight back out. Twisting the biscuit cutter seals off the edges of the biscuits and they therefore will not rise as high.
  • Arrange the Biscuits with Sides Touching. Place the biscuits on a baking sheet or in a cast iron skillet so that they’re all touching their neighbors. This will help them “climb” in the oven so that you get that great, tall lift!

Preparation and Storage

  • Make Ahead: While they’re best served warm, straight from the oven, you can bake biscuits up to 3 days in advance. Store them in an airtight container at room temperature.
  • Reheat day-old biscuits by placing them on a baking sheet in a 300°F oven for about 10 minutes.
  • How to Freeze: Allow biscuits to cool to room temperature, then wrap tightly in an airtight container or Ziploc freezer bag and store in the freezer for up to 3 months. Thaw on the counter overnight or in the microwave for a few seconds.
