If you’re looking for even more easy ground beef recipes, be sure to try this Southern meatloaf, these cast iron skillet burgers, a pot of the best spaghetti sauce, a bowl of classic beef chili, and this crescent roll Sloppy Joe casserole, too!

Why You’ll Love this Easy Bacon Cheeseburger Casserole

  • Easy. If you can brown ground beef, then you can assemble this dish! We love the simplicity of a cozy, hearty, satisfying casserole with minimal effort. You can even use microwaveable rice for a shortcut.
  • Flavorful. No boring casseroles allowed! This tasty dinner includes smoky bacon, a sweet and zesty tomato sauce, plenty of cheese, tangy dill pickles, and crunchy potato chips.
  • Kid-friendly. As far as your kids are concerned, this might be second-best only to a fast food hamburger! They get all of their favorite familiar flavors in a homemade supper — ground beef, ketchup, and fried potatoes. Plus, there are veggies!
  • Make Ahead. If it’s more convenient, you can assemble the filling in advance and then just bake the casserole when you need it. Perfect for busy weeknights!

Cook the Rice Before Adding it to the Casserole

This easy casserole calls for 4 cups of cooked rice. You can boil your own rice on the stovetop, use leftovers from a previous meal, or cook parboiled rice (such as Uncle Ben’s Ready Rice) in the microwave for a shortcut.

If using the microwaveable rice or Minute Rice instant rice, cook the rice according to the package directions before using it in this casserole. Each packet of the Uncle Ben’s Ready Rice contains about 2 cups of cooked rice, so you’ll need 2 pouches for this recipe.

Ingredients

This is just a quick overview of the ingredients that you’ll need for our favorite bacon cheeseburger casserole recipe. As always, specific measurements and step-by-step instructions are included in the printable recipe box at the bottom of the post.

  • Ground beef: sub with ground turkey or ground chicken if you prefer.
  • Onion and garlic: for savory flavor.
  • Condensed tomato soup: the binder that brings the casserole filling together. I like the Healthy Request variety.
  • Petite diced tomatoes: add flavor and texture to the dish.
  • Milk: to thin the sauce and give it a slightly creamy flavor and texture.
  • BBQ sauce: adds sweet, smoky, bolder flavor to the filling. You can sub with ketchup if you prefer.
  • Chopped dill pickles or dill pickle relish: another classic cheeseburger ingredient. Omit the pickles if you don’t like them.
  • Yellow mustard: adds a touch of bright, acidic tang.
  • Worcestershire sauce: for salty umami flavor.
  • Chili powder: for zesty flavor.
  • Kosher salt and ground black pepper: enhance the flavors of the other ingredients.
  • Rice: you’ll need cooked rice here, and just about any variety will work — brown rice, long grain white rice, basmati rice, and instant rice (Minute rice).
  • Bacon: for smoky flavor.
  • Cheddar cheese: sharp cheddar cheese or any similar cheese will work. I used a Triple Cheddar blend here, but Monterey Jack, Colby Jack, Pepper Jack, Swiss, mozzarella, or American cheese will all work too.
  • Potato chips: I use Ruffles for their great texture.

Here are a few sides that go well with bacon cheeseburger casserole:

Preparation and Storage Tips

  • This is a great make-ahead dinner. You can assemble the casserole up to 24 hours in advance and keep it covered in the refrigerator until ready to bake. Before baking, allow the dish to sit on the counter and come to room temperature for at least 30 minutes.
  • You can freeze the casserole before baking. Wrapped tightly, the assembled casserole will keep in the freezer for up to 2 months. Thaw completely in the fridge before baking according to recipe directions.
  • Leftovers will keep in an airtight container in the refrigerator for 3-4 days.
  • To reheat the casserole: If reheating an entire casserole, cover the dish loosely with foil and bake in a 350°F oven until warmed through (about 20-30 minutes). Individual portions can be reheated in the microwave for 1-2 minutes.

Recipe Variations

  • Instead of topping the casserole with potato chips, add a layer of frozen tater tots on top. If you use the tater tots, you’ll need to bake the casserole in a 400°F oven uncovered until the tater tots are golden brown and the filling is hot and bubbly, about 30-35 minutes.
  • Swap out the potato chips for buttered breadcrumbs or buttered crushed Ritz crackers.
  • Use ground turkey or ground chicken instead of ground beef.
  • Any variety of cooked rice will work in this casserole. I typically use long-grain white rice, but you can substitute with brown rice if you prefer.
  • Swap out the bbq sauce and use ketchup instead.
  • Add other vegetables to the casserole. For instance, try corn, frozen cut green beans, frozen mixed vegetables, or sliced fresh mushrooms. Canned vegetables will work, too.
  • Any variety of cheese is fine. In lieu of the shredded cheddar, try American cheese, Swiss cheese, Colby, Monterey Jack, cheddar Jack, or Pepper Jack cheese.
  • Season the filling with extra herbs or spices. Good options include chives, parsley, oregano, or basil, as well as garlic powder, onion powder, or paprika. Make it spicy with cayenne pepper or crushed red pepper flakes.

Tips for the Best Bacon Cheeseburger Casserole Recipe

  • Use microwaveable rice for a shortcut. If you’re using Uncle Ben’s Ready Rice, microwave the rice according to the package directions before adding it to the dish. Each pouch contains about 2 cups of rice, so you’ll need 2 packets for this recipe.
  • For even more flavor, sprinkle crispy fried onions over the top of the casserole at the same time that you add the potato chips.
  • Garnish the casserole with chopped fresh herbs or sliced green onion for a bright, flavorful finishing touch. Good options include fresh parsley or chives. You might also like to add some more of your favorite burger toppings, such as diced red onion, extra pickles, chopped lettuce, or a drizzle of ketchup or mustard.
  • Cooking for a smaller family? Cut all of the ingredients in half and bake the casserole in an 8-inch square dish. The rest of the cooking instructions remain the same.
