- Use 85% lean ground beef. It has enough fat to stay juicy without turning greasy. Extra-lean beef tends to dry out during the long cook.
- Mix gently. Combine the meat just until everything comes together. Overworking it is the fastest way to a tough, dense loaf.
- Cook to temperature, not time. Slow cookers all run a little differently, so pull the meatloaf when a thermometer reads 160°F rather than trusting the clock.

How to Make Meatloaf in a Crockpot
This meatloaf takes just a few minutes of hands-on work, and then the slow cooker does the rest. Here’s how it comes together:
Step 1: Line the Slow Cooker
Lay a heavy-duty foil sling in the crock and spray it lightly with nonstick cooking spray.
The sling lets you lift the whole loaf out cleanly when it’s done, so it holds its shape instead of breaking apart.

Step 2: Mix the Meatloaf
Add the ground beef, onion, eggs, breadcrumbs, Worcestershire sauce, salt, pepper, and thyme to a large bowl.
Combine gently with your hands just until everything is evenly mixed.
Swap the binder if you like: No breadcrumbs on hand? An equal amount of quick oats, crushed cracker crumbs, or dry stuffing mix works just as well.
Try a meatloaf mix: For richer flavor, use a butcher’s blend of beef, pork, and veal. Ground turkey works too; pick a blend with a little fat so it doesn’t dry out.

Step 3: Shape and Glaze
Shape the mixture into a loaf and set it into the foil sling.

Spread a thin layer of ketchup over the top.
Upgrade the glaze: For a sweeter, tangier finish, stir 2 tablespoons brown sugar and 2 teaspoons cider vinegar into 1/2 cup ketchup before spreading.

Step 4: Slow Cook to Temperature
Cover and cook on LOW for 4 to 6 hours or on HIGH for 2 to 3 hours, until a thermometer inserted in the center reads 160°F.
There’s no need to brown the beef first. It cooks safely from raw as long as it reaches that temperature.
Cook to Temperature: Because every slow cooker runs differently, lean on the thermometer instead of the clock.

Step 5: Finish and Slice
Use the foil sling to lift the meatloaf out and onto a cutting board, leaving the drippings behind to discard.
For a sticky, caramelized top, brush on a little more ketchup, set the loaf on a rimmed baking sheet, and run it under the broiler for a minute or two. Watch it closely, since the glaze can burn fast.

Slice and serve.
Add cheese for a melty middle: Fold a handful of grated cheddar into the meat, or tuck it into the center before shaping the loaf.

Prefer the oven? Place the shaped meatloaf on a foil-lined baking sheet coated with cooking spray. Bake, uncovered, at 350°F for about 1 hour, until it reaches an internal temperature of 160°F.

I’m going to try and make a different meatloaf recipe. This recipe sounds great but I have a question. Why no milk? I’ve always used a dash. Just curios.
Hi, Victoria! I use a little milk in other meatloaf recipes to soak the breadcrumbs (or oatmeal) and form a panade, which acts as a binder. My mom never used it for her recipe, and since you have a couple of tablespoons of liquid in the Worcestershire sauce, I don’t think you really need it here. That said, you can certainly add some. It won’t hurt. 🙂

Hi, Oleeta! Yes, you can absolutely do that. My recommendation would be to let it thaw in the refrigerator overnight before adding it to the slow cooker. Food safety experts advise against putting frozen meat in a slow cooker because the slow cooker doesn’t get hot enough fast enough to prevent the potential growth of harmful bacteria on frozen meat. That said, I know plenty of folks put frozen meat in Crock Pots and don’t have any issues.
Why does everyone have to put stupid ketchup and Worcestershire sauce in meatloaf? Gross. All you need is tomato sauce.
I usually use 2 +lbs and bake in oven. 90 min is about the usual time it takes at 350 degrees. Have you ever tried mixing deli chipped ham and cheese and place in the middle of the loaf? Darn tasty.
