Before You Get Started
A few tips that make a real difference with this casserole:
- Add the biscuits right before baking. If you’re prepping ahead, hold off on topping the casserole until you’re ready to put it in the oven. Biscuits placed on a cold or wet filling ahead of time will absorb moisture and turn gummy rather than baking up light and fluffy.
- Cover with foil if the tops brown too fast. Biscuit tops can darken quickly while the dough underneath is still raw. If they start getting too dark before they’re cooked through, lay a piece of foil loosely over the dish and keep baking.
- Bulk up the filling easily. Diced bell pepper, a clove of minced garlic, or a handful of canned corn are all easy additions that stretch the filling without any extra effort.

How to Make Sloppy Joe Biscuit Casserole
This is one of the simplest casseroles in the lineup. The filling comes together in one skillet, and the biscuits go on top right before it goes in the oven.
Step 1: Make the Filling
Cook the ground beef and onion in a large skillet over medium heat, breaking up the meat as it cooks, until the beef is no longer pink. Drain off the excess grease.

Stir in the sloppy joe sauce and cook over low heat until the mixture is warmed through.

Step 2: Layer the Casserole
Pour the hot beef mixture into a greased 8-inch square baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Cut each refrigerator biscuit into quarters and arrange the pieces in an even layer over the filling, covering as much of the surface as possible.

Step 3: Bake
Bake the casserole at 400°F for 20-30 minutes, or until the biscuits are golden brown and cooked through. Tent the dish with foil if the topping starts to get too dark before the biscuits are cooked through on the bottom.
Let the casserole stand for 5 minutes before serving.

Serve It Up
This casserole pairs well with a simple green side. A green salad or summer corn salad are both easy fits alongside the sweet and savory filling.

Storage and Make-Ahead
Refrigerator: Leftovers keep in an airtight container for 3 to 4 days. The biscuit topping will soften as it sits, so this one is best enjoyed fresh. To reheat, cover the dish loosely with foil and warm in a 350°F oven for about 15 to 20 minutes. Individual portions can also be reheated in the microwave for about 30 to 60 seconds.
Freezer: Store leftovers in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Make-Ahead: Prepare the beef filling up to 24 hours ahead and transfer it to the baking dish, topped with cheese. Cover and refrigerate. When you’re ready to bake, cover the dish and heat in a 400°F oven for 15 to 20 minutes until hot, then uncover, top with the biscuit quarters, and bake for an additional 20-30 minutes until the biscuits are cooked through.
Freeze Before Baking: Assemble the filling and freeze without the biscuit topping. Add the biscuits right before baking. If using a freezer-to-oven-safe dish, bake directly from frozen: cover and heat until the filling is hot, then add biscuits and bake uncovered until golden.
