1cupdiced onion (about 1 small onion or ½ of a large onion)

Instructions
Preheat oven to 400 degrees F. Spray a 2-quart baking dish (about 8-inch square) with nonstick cooking spray; set aside.
In a large skillet, cook the beef and onion over medium-high heat until the beef is no longer pink and the onion is translucent, about 5-7 minutes. Drain off the excess grease.
Stir in the sloppy joe sauce and cook over low heat until warmed through.
Pour the hot beef mixture into the prepared baking dish.
Sprinkle the cheddar cheese evenly over the top.
Arrange the biscuit quarters in an even layer over the filling.
Bake for 20-30 minutes, or until the biscuits are completely cooked through. This takes longer for the bottom half of the biscuit pieces, so check carefully before removing the dish from the oven. Cover the dish with foil after the first 15-20 minutes if the tops of the biscuits are getting too dark before the casserole is done. Let the dish stand for about 5 minutes before serving.
Notes
Add the biscuits right before baking. If prepping ahead, keep the biscuit topping off until you're ready to put the dish in the oven.
Cover with foil if the biscuit tops start to brown before the dough is cooked through. Continue baking, covered, until done.
Bulk up the filling: Add diced green bell pepper, minced garlic, or canned corn to the skillet with the ground beef for a heartier casserole.
To serve a larger family: Double all ingredients and bake in a 9x13-inch dish. Baking time remains the same.
Cheese options: Sharp cheddar works great, but Colby Jack, Pepper Jack, or Monterey Jack are all good swaps.
Protein swaps: Ground turkey or ground chicken can be used in place of ground beef.
Make-ahead: Prepare the filling and transfer to the baking dish, topped with cheese. Cover and refrigerate for up to 24 hours. When ready to bake, heat covered in a 400°F oven for 15 to 20 minutes until hot, then top with biscuits and bake uncovered for another 20-30 minutes.
