Good morning, and happy Sunday! This week included Easter, Spring Break, and lots of family time. You’ll find all of the highlights from the past few days, along with each of our dinners, in today’s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what we’ve been up to over the past week — as it relates to our dinners each night. This series gives you a glimpse “behind the scenes” at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.
This Week’s Meals
Now, let’s back up to last weekend…

Sunday was Easter! We started our holiday with a French farmhouse breakfast cake, fruit, eggs, and bacon for a quick bite before an early church service.

We then hit the road to head south to Nelson County to spend the day with family.


My mom served bbq pulled pork sandwiches with coleslaw for lunch.

Then Keith and Gibbs played a round of golf, while Casey and Spencer spent the afternoon in the stream hunting for old golf balls (they collected over 100 of them!).



On the dinner menu: grilled beef tenderloin, deviled eggs, oven roasted asparagus, carrots, and potatoes, focaccia and dinner rolls, and a Caesar salad.

For dessert, my mom made the no-bake key lime cheesecake from Southern Living, and I brought along my Easter-colored M&M chocolate chip cookies.


Shall we chat about books? This week I finally read Project Hail Mary by Andy Weir. I’m definitely not someone who typically enjoys sci-fi (so I glazed over most of the science-y talk), but I loved the story! I’ve heard so many great things about this novel, and my friend Mollie was raving about the movie, so I figured I should read the book before seeing the film. Highly recommend this one!

The kids were on spring break this whole week, so our Monday got off to a slower-than-usual start.

Gibbs played a round of golf, so he was gone almost all day. Meanwhile, the younger boys and I went to Yoder’s for a few groceries before getting them out the door for their separate soccer practices.

Once we were all back home, we had ground beef nachos for supper.

Plus homemade guac, salsa, and this Mexican Street Corn salad for some veggies.

Another beautiful start to Tuesday…


The spring pastels were on display this week, and Virginia’s dogwoods are in full bloom.

Keith played golf with Gibbs and had lunch with his brother, while I took Spencer to an orthodontist appointment and met Mollie for a walk at her farm.

Keith and Casey were gone all evening for Casey’s game over in Woodstock, so it was just three of us at home for supper that night. I threw together a quick meal after Spencer’s practice: cast iron chicken breast…

…with pesto pasta and marinated cucumbers.

Keith and Gibbs met my father-in-law for a round of golf near Richmond on Wednesday, so the younger boys and I were on our own for the day.

We went for a walk, took care of some yard chores, and made a Costco run in Charlottesville.

Casey had a team dinner at his coach’s house and Youth Group that evening, but the rest of us enjoyed lemon garlic shrimp, rice, a loaf of crusty bread from the grocery store bakery, and a Costco Caesar salad for supper.

Thursday was a work day in the kitchen for me, then off to Casey’s practice that evening and Spencer’s practice later in Charlottesville.

I kept supper quick and easy so that we could get a meal on the table when we were all home later that night: a big pot of spinach tomato pasta with a side of frozen garlic knots.

After Pilates with Adria on Friday morning, I stopped by Yoder’s and noticed the soft pretzel truck parked out front. Of course I needed to bring a some of them home (this jalapeno cheddar version was delish)!

Casey had a home soccer game that night. Thank goodness for a warm, breezy evening!

I had prepped our meal in advance, knowing that we would all come home hungry. I quickly assembled crab melts, pulled fresh fruit from the fridge, and baked a bag of frozen onion rings. A perfect weeknight meal…

And that brings us to the weekend!


We had a Saturday completely free of obligations, so we took full advantage — a long morning walk, stocking the kitchen with groceries for the week ahead, and an afternoon visit with Keith’s parents.

Keith grilled marinated London broil for supper,

which we paired with Aunt Bee’s shrimp pasta salad, fresh corn, dinner rolls, and steamed broccoli.
