The Goodness In Fish And Seafood

We all know that seafood is good for us, thanks to the natural omega-3 fatty acids, lean protein, and critical vitamins and minerals that it offers. These key nutrients can aid brain development, promote heart health, help fight obesity, improve arthritis and join pain, and just generally improve overall health.

That’s why the USDA, American Heart Association, American Cancer Society, and American Diabetes Association all recommend eating seafood at least twice a week.

BUT, we also know that sometimes it can be HARD to dream of new ways to serve seafood that our family will enjoy, and even harder to find the time to actually prepare those recipes. No need to stress, my friends…

Plus, since this salad also includes some bacon and cheese, it’s one of the few entree salads that the hungry boys in my house will actually consider a “meal.”

And don’t be intimidated by the homemade avocado salad dressing! It only requires a few basic ingredients, and you just toss them into your blender and give it a whirl. That’s it! Seriously…it’s a dressing that’s ready in about 60 seconds flat (and that includes the prep time)!

What’s In The Avocado Dressing?

  • Ripe avocado
  • Lemon juice
  • Greek style yogurt
  • garlic
  • salt and pepper

Top Tip: If the avocado dressing is too thick think it our slightly with water

How to Cook Salmon

There are three main ways to cook your salmon; grilling, pan frying or roasting.

All of them are easy and healthy so it’s really up to you what you prefer.

Pan frying and grilling are very similar, simply place the samon skin side down on the skillet or griddle pan and cook for around 5-10 minutes until no longer pink.

Alternatively, you can roast it in the oven for around 10-15 minutes until cooked through.

Pro Tip: Salmon doesn’t take long to cook so keep an eye on it so it doesn’t dry out.

How to Make Salmon Cobb Salad in 3 Easy Steps

  1. Cook Salmon according to packet instructions or using your preferred method.
  2. For the dressing, puree all ingredients in a food processor or blender until smooth. Add 1 -2 tablespoons of water (or more) until the dressing reaches desired consistency. Cover and refrigerate until ready to use.
  3. Divide spinach and lettuce evenly among four serving bowls or plates. Top each salad with equal amounts of bacon, avocado, tomatoes, eggs, and blue cheese. Top each salad with a salmon fillet and about 2 tablespoons of dressing. Serve immediately.

Ingredients
  

FOR THE DRESSING (yields ¾ cup, nutrition information based on 2 tablespoons per serving):

  • 1 ripe avocado peeled and coarsely chopped
  • 1 tablespoon lemon juice
  • ½ cup non-fat plain Greek-style yogurt
  • ¼ teaspoon garlic salt
  • ¼ teaspoon salt
  • Pinch of pepper
  • 1-2 tablespoons water for thinning as necessary

FOR THE SALAD:

  • 3 slices center-cut bacon cooked and chopped
  • 4 cups baby spinach
  • 4 cups chopped romaine lettuce
  • 1/3 cup diced peeled avocado
  • 1 cup halved grape tomatoes
  • 2 hard-cooked large eggs chilled and quartered
  • 1 ½ ounces blue cheese crumbled
  • 4 Gorton's Signature Seasoned Salmon Fillets about 3.5 ounces each, cooked according to package instructions

Instructions
