    Overnight Apple Crisp Breakfast Parfait

    This easy grab-and-go breakfast is a fall treat for your tastebuds! Layers of tender spiced apples, creamy Greek yogurt, and protein-packed quinoa come together in a healthy Overnight Apple Crisp Breakfast Parfait that tastes like a decadent dessert!

    If there is one crop that we are most proud of in Central Virginia, it would definitely be our apples. We celebrate apple season all fall, and folks travel from the cities to visit our orchards, sample our homemade apple butter, and hike in our mountains.

    But we don't wait until September or October before we pull out our favorite apple recipes. In fact, by the first week in August, the boys and I headed up the road to our neighbors' orchard to pick buckets of Ginger Gold (the kids' favorite), Rambo, and other early varieties.

    Spence was in my backpack, which he thought was great because he could actually reach some of the fruit!

    Meanwhile, I put the other two boys to work!

    It was a beautiful morning, and we came home with quite a haul!

    This Healthy Breakfast Parfait Is Perfect For Weeknights

    Since then we have stayed busy snacking on apples, making our favorite Slow Cooker Apple Butter, blending together Apple Pie Smoothies, and fueling our active days with this healthy breakfast parfait.

     

    The recipe is a great way to use up leftover quinoa, brown rice, or oats and toss them together in a quick and easy breakfast or snack that you can grab-and-go to take with you to work, school, or after-school sports.

    And of course, the star of the show is the fresh apple!

    Just chop an apple into bite-sized pieces (no peeling necessary), and place the pieces in a microwave-safe bowl. Sprinkle with some Apple Pie Spice (or a few dashes of cinnamon and nutmeg), microwave until tender, and you have a warm bowl of baked apple that tastes like your favorite pie filling!

    Layered with thick and creamy vanilla Greek yogurt and finished with crunchy toasted pecans, the parfait is a special treat that also happens to be packed full of good-for-you ingredients.

    And if you're feeling a little bit indulgent, you can even top it with a bit of whipped cream...making it an ideal healthy snack to curb those sweet tooth cravings!

    Overnight Apple Crisp Breakfast Parfait

    Ingredients

    • 1 5.3 ounce container Greek-style vanilla yogurt
    • 1 apple diced
    • ¼ teaspoon apple pie spice can substitute with ¼ teaspoon cinnamon and a pinch of nutmeg
    • ¼ cup cooked quinoa packed (or you can substitute with oats, granola, or cooked brown rice)
    • 2 tablespoons chopped toasted pecans or granola for topping
    • Optional: whipped topping

    Instructions

    • Place diced apple in a microwave-safe bowl. Sprinkle with apple pie spice and toss to coat. Microwave on high until apple reaches desired softness (approximately 1-2 minutes). Set aside to cool for a few minutes.
    • In a separate glass jar or other container, place half of the yogurt.
    • Top yogurt with half of the cooked apple.
    • Add 2 tablespoons of quinoa on top.
