    February is definitely the time of year when we get that itch for warmer, sunnier days.

    Virginia has some very gray, cold winters, and by now we're all over it. Bring on Spring!

    This Healthy Strawberry Smoothie is one of the easiest ways to brighten your mornings and bring a little bit of the tropics into your own kitchen -- no matter what the weather looks like outside.

    Best of all, the high-protein, dairy-free strawberry smoothie comes together in about 2 minutes with just a handful of simple ingredients. It's a plant-based snack that tastes like dessert!

    You can pick up everything that you need for this healthy strawberry smoothie at your local Target, so you don't have to worry about hard-to-find ingredients or time-consuming stops at multiple stores.

    There are two main ingredients that form the base of the smoothie. First, the liquid: I love this So Delicious Dairy Free Organic Almondmilk because it's a better-for-you, dairy-free option that's low in calories yet still incredibly creamy.

    The second main ingredient in this healthy strawberry smoothie is the FRUIT! For a quick option that helps the snack come together in minutes, I keep a bag of no-sugar added Mango & Strawberry Blend frozen fruit in my freezer.

    This eliminates any chopping, peeling, or prep work, and has all of the same nutritional benefits as fresh fruit. Plus, the frozen fruit helps to thicken the strawberry smoothie and give it that creamy, milkshake-like texture!

    The frozen fruit and the almondmilk go in a high-speed blender, along with a pinch of salt and a scoop of your favorite vanilla-flavored plant-based protein powder (also available at Target).

    Healthy Strawberry Smoothie With Mango

    Ingredients

    • 1 cup frozen no-sugar added Mango and Strawberry Blend
    • ½ banana sliced and frozen
    • ¾ cup  So Delicious Dairy Free Organic Almondmilk or more, as needed for thinning
    • 1 scoop vanilla protein powder optional*
    • Pinch of salt

    Instructions

    • Place all ingredients in a high-speed blender. Puree until smooth. If the mixture is too thick to blend, add additional almondmilk in very small increments until it reaches the desired consistency.

    Notes

    *Be sure to use a plant-based protein powder for a dairy-free smoothie.
    Note: The ingredient measurements are simply a guideline. Feel free to use more (or less) almondmilk and more or less frozen fruit so that your smoothie reaches your preferred consistency. I like a really thick smoothie that I can eat with a spoon, so I always start with a very small amount of liquid and add more, slowly, as needed.

      I have been making a variation if this smoothie in our house for years, although I never added salt. Do you know what it adds? I am on a low salt duet, so just curious. Also, I add a tablespoon of honey for sweetness and sometimes add about a 1/4 cup of Greek yogurt for added thickness.

        Hey, Meg! You can totally omit the salt if you're watching your salt intake. I like to add a pinch of salt to most of my smoothies because I think it's a nice counterbalance to the sweetness of the protein powder and fruit. Just a personal preference, though, so if your tastebuds like the smoothie without the salt, there's no need to add it in. 🙂

      What kind of protein powder do you use? I use a dairy, whey and soy free mix but am always curious to hear what others use.

        Hi, Tina!

        I like a bunch of different options, so I tend to go with whichever brand is on sale or easily available when I need it. 🙂

        For a plant-based powder, I like Vega and I like Tone It Up (both are at Target). For whey protein, I like Quest or IdealLean. Hope that helps!
