    Avocado And Crab Melt

Published: Jul 23, 2015 by Blair Lonergan

The classic tuna melt gets an upgrade! Just as quick and easy as the original, this Crab and Avocado Melt is full of fresh ingredients for a fast lunch or simple weeknight dinner that's ready in just minutes!

I am so inspired by fresh summer produce! And since I can't grow ALL of my own food in my garden, I'm glad that my local Food Lion grocery store has all of our favorite wholesome ingredients readily available!

During a quick spin through Food Lion (with three little boys in tow), I grabbed some of our favorite summer veggies, a loaf of crusty, rustic bread from the bakery, and some seafood (which seemed like a nice, light option for a hot summer day).

These simple staples come together in a fast, open-faced sandwich that is perfect for the season! And while it might look "gourmet" or "fancy," it's anything but! Just a few minutes under the broiler and this cheesy, satisfying meal is ready...with minimal effort on your part.

Since I was excited about this tasty concoction, I decided to share it with other Food Lion shoppers. The store sells everything that you need to toss this together, making it a convenient meal option of other busy moms, too.

Have you seen Food Lion's new website? It's clean, easy to navigate, and it includes some really great features. There is a coupon section where you can either load the coupons to your MVP Card or print them at home. You can find a nearby store, view the Weekly Specials in your area, create shopping lists online, and utilize the extensive recipe portal.

The recipe portal allows you to search for recipes based on the meal, the occasion, the ingredients in your kitchen, or your special dietary concerns. It's also really easy for home cooks like you and me to add recipes to the website for other Food Lion shoppers to view. That's exactly what I did here!

Once you have set up an MVP member account, you can submit your favorite recipes to the Food Lion recipe portal. You will then name your recipe, upload a photo of your dish, add a description, and input the ingredients. Finally, add directions for each step and tag the recipe so that it's categorized appropriately. You have a chance to review the recipe before final submission. That's it!

When I added this recipe to the recipe portal, it took me about 5-7 minutes and it was very intuitive. I wasn't frustrated or confused, and the site walked me through every step of the (short) process!

Be sure to check out the full recipe for my Crab and Avocado Melt on the newly-revamped Food Lion website HERE, and don't forget to submit your own recipes as well!

This looks so good. I love avocado toast, but this is taking it to the next level for sure! Thanks 🙂

Hi, Kati! You're right -- it's like avocado toast kicked up a notch (or two)!
