You’re going to love how easy this dump-and-bake Chicken and Rice Cordon Bleu Casserole comes together! It’s the perfect leftover ham recipe, and a great way to use up some rotisserie chicken.
Topped with grated Swiss cheese, this creamy 10-minute meal is a quick comfort food dinner that the whole family will devour!
Do you guys ever struggle to figure out what to do with all of the leftover ham from a holiday?
Whether I prepare my own ham or buy a Honey Baked Ham from the store, we always seem to end up with plenty of extra meat…and you can only eat so many ham sandwiches!
After I made this delicious Easy Citrus-Glazed Baked Ham, I decided that I’d toss the leftovers into a casserole.
And since I had some extra leftover chicken on hand as well, Chicken Cordon Bleu instantly came to mind. It’s one of the best flavor combinations EVER, don’t you think?
But it probably comes as no surprise that I don’t really have the time or patience to make my mom’s classic recipe for Chicken Cordon Bleu.
Pounding the chicken flat, rolling it up with toothpicks…um, no thanks! Instead, I much prefer the Dump-and-Bake method of cooking!
It’s not glamorous, but it sure is quick and effective — and I’ve mastered the art of making a dump recipe seem like it took me MUCH longer to prepare!
For this particular dish, I just adapted one of my family’s all-time favorite casseroles: my Chicken, Broccoli and Rice Casserole.
That recipe has been prepared SO many times (by myself, and by my extended family and friends), so I knew that this version would work equally well. In fact, maybe even better?! Trust me: this is a WINNER!
What you Need to Make Cordon Bleu Casserole
- Cooked chicken
- Cooked rice
- Cooked ham
- Chopped onion
- Condensed cream of chicken soup
- Mayonnaise
- Butter
- Swiss cheese
How to Make Chicken and Rice Cordon Bleu Casserole

Spray a 2-quart casserole dish with cooking spray and set aside.

In a large bowl, combine first 7 ingredients.

Place chicken mixture in prepared casserole dish and top with shredded cheese.

Bake, uncovered, for 30 minutes (or until heated through and bubbly).
Top Tips to Remember
- You can use any kind of leftover chicken for this recipe. If you have raw chicken in your fridge make sure to cook it first.
- Use cooked wholegrain rice for added fiber.
- You can you cheddar cheese or mozzarella instead of Swiss cheese.
- Use low-fat mayo to reduce calories.
- Store leftovers in the fridge for up to 2 days. When reheating make sure it is piping hot all the way through.

Chicken and Rice Cordon Bleu Casserole
Ingredients
- 2 cups diced cooked chicken such as rotisserie chicken
- 1 ½ cups cooked rice
- 2 cups diced cooked ham
- 2 tablespoons chopped onion
- 1 10.5 ounce can condensed cream of chicken soup (check label to make sure it's gluten free, if necessary)
- ½ cup mayonnaise
- 2 tablespoons melted butter
- 4 ounces about 1 cup shredded Swiss cheese
Instructions
- Preheat oven to 350F (180C).
- Spray a 2-quart casserole dish with cooking spray and set aside.

I made this last night. It was the easiest meal I have ever made with all the leftovers in my house. I used minute rice uncooked and added a half cup of water. It came out perfect. Thank you for a wonderful alternative to my usuall when I have a half rotisserie chicken in the house.
