    Chocolate Almond Coconut Snack Mix

    An easy, make-ahead snack option that's ready in just minutes, full of delicious ingredients, and 100% kid-approved! With loads of chocolate, almonds, and coconut, this Chocolate Almond Coconut Snack Mix is a sweet-and-salty treat to satisfy any craving and power you through all of your adventures!

    Almond Joy Snack MixDo you guys love to snack as much as we do? With three little boys (and one big boy), I never leave home without a full stash of munchies in my bag. That's especially true when we're off on active adventures! It doesn't take long before our stomachs are growling and looking for fuel!

    Blue Diamond Roasted Salted Almonds have been a favorite snack in our house for years. Gibbs was devouring handfuls of them long before he could even say the word "almond," so they are a regular pantry staple around here.

    And mixing the salty, crunchy almonds with coconut and chocolate? It's pretty much SNACK HEAVEN.

    That's why this guy was very excited to help me toss together a batch of the mix before we headed out on a family hike last weekend!

    This "recipe" is so easy that even a 5-year-old can do it. 🙂

    Gibbs Snack Mix

    Since it was about 100 degrees at our house on Sunday afternoon, we decided to take a short 20 minute drive to one of our favorite local hikes in Shenandoah National Park: White Oak Canyon. It's always cooler there, and the shade from the thick trees is perfect at this time of year!

    With snack mix (or in this case, "Trail Mix") in hand, we took off on our little adventure.

    I'm not sure what made the boys happier: a cool adventure in the woods, or a chocolatey treat to power them through!

    By the end of the hike we had all finished our (large) bags of snack mix!

    I love that this easy-to-prep treat can be made in advance and stored in my pantry for those days when we're rushing out the door and need something simple to bring along with us.

    It also happens to be a great option for those mid-afternoon munchies or the post-dinner chocolate craving that always seems to strike. With a glass of cold milk it's just.right.

    Chocolate Almond Coconut Snack Mix

    Ingredients

    • 2 cups chocolate-flavored wholegrain O’s cereal
    • ½ cup Blue Diamond Roasted Salted Almonds or Blue Diamond Lightly Salted Almonds
    • ½ cup chocolate chips
    • ¼ cup shredded coconut

    Instructions

    • Combine all ingredients in a large bowl. Store in an airtight container until ready to serve!

      I love snacking, especially in the summer when you can enjoy it outside. This almond joy version sounds incredible, Blair! I love how easy this is to make, and how delicious it looks, too. Sounds so perfect for this time of year! Pinned!

      YES I am a total snacker, but luckily my son only has 4 teeth so I don't have to share snacks like this! hehehehe 🙂 I love Almond Joys! When the neighbor kids (who hate coconut) get done trick-or-treating they know to give those candy bars to me! I am going to try this but sub the O's cereal with gluten free chex. Thanks for the inspiration!

      I am an extreme coconut lover. I made this and it is VERY good. Wondering if anyone has suggestions on keeping the chocolate O's crispy other than eating it all in one day, which mind you, I could easily over indulge. I put mine in a ziplock bag but with the moisture of the coconut it made the O's seem stale by the next day. I may try toasting the coconut a bit next time, but if anyone else has a suggestion, please share.

        Hmmm...I'm not sure, Terri! I don't recall having that same problem, but maybe we just ate it too fast?! 🙂 Toasting the coconut would add great flavor and would probably work well. Sorry I'm not more help, but I'm glad that you liked the flavors!
