Good morning, and happy Sunday! This week included an Easter celebration, warm spring weather, and lots of kids’ activities. Youโll find all of the highlights from the past few days, along with each of our dinners, in todayโs roundup ofย Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what weโve been up to over the past week โ as it relates to our dinners each night. This series gives you a glimpse โbehind the scenesโ at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.
This week’s Meals
Now, letโs back up to last weekendโฆ

We went to the early church service on Easter Sunday, so I prepped an easy breakfast to enjoy before rushing everyone out the door: blackberry muffins (with some added raspberries as well), bacon and sausage, and fresh fruit.

After church, we headed south to Nelson County to spend the day with my parents, aunt, and uncle.


Mom’s afternoon snacks on the porch included pimento cheese and crackers, deviled eggs, potato chips and onion dip, and spinach dip with veggies.

And here’s my supper plate…

We had grilled beef tenderloin with sauteed mushrooms,


Duke’s mac and cheese, roasted asparagus, and fruit salad. Plus a bread basket with banana nut bread and hot cross buns.

I was in charge of the dessert, so I brought my strawberry cake with cream cheese frosting and a plate of Cadbury egg chocolate chip cookies. Needless to say, we were all stuffed (and full of sugar) by the end of the day. Everything was delicious!

Let’s chat about this week’s book! I recently read Weyward by Emilia Hart, which I really enjoyed. A little bit mystery, a bit historical fiction, and a bit thriller, it’s hard to categorize this entertaining novel. Weaving together the stories of three extraordinary women across five centuries, Weyward is a spellbinding story about what might happen when the natural world collides with a familial legacy of witchcraft.

The kids returned to school on Monday, and Keith and I headed up the road for a walk before getting started with work for the day.

Casey had a soccer game at the high school that evening, and I served baked chicken legs for supper afterwards. Plus sauteed zucchini and yeast rolls on the side.

Tuesday was very similar to Monday — fresh air, checking off the to-do list, and prepping meals in advance…

I made a double batch of waffles and bacon to have on hand for quick breakfasts in the mornings (per the kids’ request), and also prepped dinner ahead of time since I knew that it would be another busy evening.

Keith went to Casey’s away game, while I took Spencer to a late soccer practice in Charlottesville. On the menu: Greek yogurt chicken salad sandwiches on pretzel rolls, plus potato chips, cut-up veggies, and Ranch dip.

I met Mollie for a walk on a beautiful Thursday morning, and joined my friend Jan for lunch at Jack’s Shop Kitchen mid-day.

Casey had soccer practice, Gibbs played 9 holes of golf, and we all sat down to a late supper afterwards. I made sheet pan sausage and peppers, spaghetti with marinara, and a side of garlic bread.

Ashley and I walked our dogs together on Thursday morning, and then I spent the rest of the day in the kitchen cooking and taking photos.

We had marinated and grilled London broil for dinner after Casey’s practice,

which we paired with a classic pasta salad (the kids’ favorite),

crispy seasoned roasted potatoes (another family favorite), and a house salad with candied pecans (because I felt like we needed something green, hah!).

Friday!

I ran errands before lunch, including a quick stop at Yoder’s for the weekly staples (lunch meat, cheese, peanut butter, etc.)…

Said hi to our friends!


Casey had a soccer game that evening and Gibbs had a golf lesson. When we all returned home late and hungry, it was nice to have Keith pick up carryout pizzas for supper.

And that brings us to this weekend!

Spencer had a game in Waynesboro on Saturday, so I planned an easy meal to throw together when we returned home that afternoon: honey lime grilled shrimp,

which we paired with stick of butter rice and steamed green beans (from the freezer).

I made your pasta salad with grapes & broccoli last week. It was so delicious! I chopped the broccoli into small pieces and you could barely taste it. Even my hubby ate it and he hates broccoli. It was even better the next day!
