I spent a brief part of my childhood as a Girl Scout, so the classic cookies have always held a special place in my heart. Naturally, when I heard that Pillsbury™ Girl Scouts® Baking Mixes are now available at Walmart, I had to get my hands on them right away. Seriously — does it get any better than Thin Mints® and Caramel & Coconut inspired flavors that can be baked in the form of brownies, blondies, or cupcakes?! I think not.
When I was at Walmart last week with my two younger boys, I grabbed a box of both the Thin Mints® Flavored Brownie Mix and the Thin Mints® Flavored Cupcake Mix. The mint chocolate cookies have always been my favorite, so I couldn’t decide between these two options.
On days when the weather is too rainy, too hot, or too cold to spend a lot of time outdoors, my boys and I often turn to baking as a form of entertainment. Using a mix is the perfect way to spend time together in the kitchen without embarking on an elaborate cooking experiment. After all, with three little boys I’m always looking for ways to make my life easier!
The kids know their roles when it comes to preparing sweet treats — they love to measure, scoop, mix, and of course…TASTE! On this particular morning we decided to start with the brownies, which only required a handful of simple ingredients — 3 tablespoons of water, 1/3 cup of oil, 1 egg, and the prepared mix. I really love that the Pillsbury™ Girl Scouts® Baking Mixes contain no colors, preservatives, or artificial flavors.
Casey helped me measure and stir the ingredients,
before pouring the batter into a greased square pan and popping them in the oven for 29 minutes. The end result was absolute perfection…

Thin Mints® Brownies with Chocolate Chunks
- 1 14.1 ounce box Pillsbury™ Thin Mints® Brownie Mix with Chocolate Chunks in the Mix
- 3 tablespoons water
- 1/3 cup oil
- 1 egg
- Set oven to 350 degrees F for metal or glass pan. For dark coated pan, set oven to 325 degrees F. Coat bottom of pan with no-stick cooking spray.
- Stir brownie mix, water, oil and egg in bowl until blended, about 50 strokes. Spread into pan.
- For 8x8-inch pan, bake for 29-32 minutes.
- For 9x9-inch pan, bake for 26-29 minutes.
- Cut and serve when completely cooled. Store loosely covered.
