It’s made with simple ingredients, it comes together from start to finish in about 30 minutes, and it’s loaded with zesty flavor. We all need more simple shrimp and rice recipes in our repertoire!

- Start with any variety of cooked rice. Leftovers from a previous meal work great, or you can use microwaveable rice pouches for a shortcut. We like long grain white rice, but brown rice, wild rice, jasmine rice, or basmati rice are all nice options as well. - Adjust the seasoning to suit your taste. For instance, add cayenne or crushed red pepper flakes to make it even more spicy. Use regular sweet paprika rather than smoked paprika. Give it bolder, zestier flavor with extra Cajun seasoning or Creole seasoning.

- Sauté the “holy trinity” of veggies — celery, onion, and bell pepper — until soft. Then add the garlic and cook for about 30 more seconds.
- Stir in the shrimp and seasoning. Cook until the shrimp are just barely pink and opaque. It’s fine if they’re not quite done at this point, since they’ll continue simmering for a few more minutes.
- Add the diced tomatoes, broth, and lemon juice. Scrape up any browned bits from the bottom of the pan, since these add great flavor to the finished dish. Simmer for 1 to 2 minutes.
- Reduce the heat, stir in the cooked rice, and warm through for about 1 more minute.
- Garnish with sliced green onions, fresh herbs, or lemon wedges.
