When it’s under the broiler, the sugar in the maple syrup caramelizes, creating a crispy exterior and moist, tender inside.

You’ll Love the Ease of a Sheet Pan Salmon and Sweet Potato Dinner

If you couldn’t tell, I love the idea of one-dish meals. Whether it’s made in a slow cooker, in a soup pot, or in a casserole dish, quick meals with very few dishes get my stamp of approval! A “sheet pan dinner” is simply a meal that cooks on one tray (or rimmed baking sheet). You don’t have to juggle meat on the stove, sides in the oven, or salad in a bowl! Instead, throw everything onto a single dish and you’ve got your protein, starch, and veggies ready to go.

I had to play around with the timing on this particular sheet pan supper to get it just right in my oven, but I was finally very satisfied with the results…and I’m excited to share them with you today. The meal is packed with nutrition, it tastes delicious, and best of all…you have a complete weeknight meal cooked on a single tray!

Ingredients for this Sheet Pan Dinner

This is a quick overview of the ingredients that you’ll need for the easy sheet pan salmon. As always, specific measurements and complete cooking instructions are included in the printable recipe box at the bottom of the post.

  • Sweet potatoes: peeled and cut into 1-inch cubes. Keep them small and uniform in size so that they’re evenly cooked by the time the salmon is done.
  • Broccoli: a fresh head of broccoli (or two) cut into florets.
  • Salmon: I use skin-on salmon filets. Frozen salmon works fine, just make sure to thaw it in the refrigerator overnight before using in this recipe.
  • Maple syrup: such a great companion with salmon and sweet potatoes, the sugars in the syrup caramelize under the broiler, giving the fish a crispy exterior.
  • Dijon mustard: for savory, zesty flavor. This ingredient also emulsifies the glaze, bringing everything together.
  • Olive oil, salt and pepper: kitchen staples that I don’t actually “count” in my list of 5 ingredients, but that are essential to the perfect sheet pan salmon dinner!

How to Make Sheet Pan Salmon

Giving the potatoes and broccoli a head-start in the oven before adding the fish to the pan is the key to a perfectly-cooked sheet pan dinner. The veggies have time to cook until they’re tender, without drying out the salmon.

  1. Line a half sheet pan with foil (for easy clean up), and spread the broccoli and sweet potatoes in a single layer on the pan.
  2. Drizzle the potatoes and broccoli with olive oil, then toss to coat in the oil. Season with salt and pepper to taste.
  3. Roast the vegetables in the oven at 425°F for about 15 minutes, or until the potatoes are almost fork-tender.
  4. Whisk together the maple glaze for the salmon.
  5. Push the vegetables to the edge of the pan, and place the salmon in the center. Leave some space in between each piece of salmon to allow even cooking.
  6. Brush each piece of fish with plenty of maple glaze, and place the sheet pan dinner under the broiler.
  7. Broil for 7-10 minutes, or until fish is crispy on the outside and flakes easily with a fork.
  8. Garnish with lemon wedges and your favorite fresh herbs, such as parsley, basil, thyme or chives. These add a nice, bright, colorful finishing touch.

Preparation and Storage Tips

  • Store leftover salmon and vegetables in an airtight container in the refrigerator for 1-2 days.
  • You can also freeze the leftovers for four to six months. Thaw the cooked salmon in the fridge or immersed in cold water. Use cooked, thawed salmon in salads or as a substitution for canned salmon in casseroles, pasta dishes, sandwiches, or wraps.
  • To reheat leftover salmon, sweet potatoes, and broccoli, place on a sheet pan and warm in a 325°F oven just until heated through. You can also reheat individual portions in the microwave for about 1 minute.

Tips for the Best Salmon Sheet Pan Dinner

  • Line the baking sheet with foil or parchment paper for easy cleanup. The maple glaze will drip down and burn on the pan, which is hard to get off later.
  • Total baking time will vary depending on the size and thickness of your fillets. You know the fish is done when it flakes easily with a fork. Be careful not to overcook the salmon or it will become dry.
  • If your salmon fillets are particularly thick, you might need to add them to the baking sheet with the vegetables for a few extra minutes in the oven before switching the temperature to BROIL.
  • Broiling gives the salmon a beautifully crisp exterior, while keeping the inside moist and tender. It also produces a great char on the outside of the broccoli and potatoes, which gives them so much extra flavor!
  • If it looks like your broccoli or potatoes are getting too dark and charred before the fish is done, remove them from the pan and return the salmon to the oven on its own.

With just 5 ingredients, this sheet pan dinner with maple-glazed salmon, sweet potatoes, and broccoli is an easy way to serve a healthy meal!

Ingredients

  • 2 sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil, plus more for drizzling
  • 12 ounces broccoli florets
  • 4 salmon fillets (about 4-6 ounces each)
  • ¼ cup maple syrup
  • 2 tablespoons Dijon mustard
  • Kosher salt and ground black pepper, to taste

Instructions

  • Preheat the oven to 425°F. Line a rimmed baking sheet with aluminum foil and spray with cooking spray. Spread the sweet potatoes and broccoli onto the prepared pan. Drizzle with 2 tablespoons of olive oil, or more as needed to fully coat the vegetables. Toss the vegetables in the oil and season with salt and pepper, to taste. Roast for 10-15 minutes, or until the potatoes are almost fork-tender.

  • While the potatoes and broccoli are roasting, prepare the glaze for the salmon. In a small bowl, whisk together the maple syrup, mustard, ¼ teaspoon salt, and ¼ teaspoon pepper.

  • Remove the vegetables from the oven and turn the oven setting to BROIL on “high.” Push the broccoli and potatoes to the outer edges of the sheet pan to make room in the center for the fish. Place the salmon in the center of the tray, leaving at least ½-inch of space in between each fillet so that the fish cooks evenly. Brush the maple glaze on top of each piece of salmon.
Brushing salmon fillets with a maple mustard glaze.
  • Broil for 7-10 minutes, or until the salmon flakes easily with a fork and the top is browned and crispy. The potatoes and broccoli should be roasted and tender as well. The total broiling time will depend on the size and thickness of your fish. If the potatoes and/or broccoli start to get too dark before the salmon is done, just use a spatula to transfer the vegetables to a separate plate. Return the fish to the oven until it's finished.

Notes

If your salmon fillets are particularly thick, you might need to add them to the baking sheet with the vegetables for a few extra minutes in the oven before switching the temperature to BROIL.
If you substitute baby gold or red potatoes for the sweet potatoes, cut them into halves or quarters (depending on their size), and give them a 10-minute head start in the oven before adding the broccoli to the pan. I find that these potatoes just take a bit longer to soften than the sweet potatoes.

Recipe Variations

  • You can bake the salmon from frozen, but you’ll need to extend the baking time to account for the frozen fish. The extra moisture in the fish may prevent the final dish from becoming quite as crispy on the outside, too.
  • Swap out the Dijon and use yellow prepared mustard instead.
  • Season the fish with other herbs and spices before adding the glaze. We love to sprinkle on some of this all-purpose seasoning, but onion powder, garlic powder, dried herbs like rosemary, thyme, parsley, or chives, paprika, or even spicy cayenne would all be great, too.
  • Double all of the ingredients to feed a larger family, or cut all of the ingredients in half to serve just one or two. The instructions and total cooking time will remain the same.
  • Use cauliflower or Brussels sprouts instead of broccoli. If you’d like to swap out the broccoli for asparagus, just pull the asparagus off of the pan before you add the fish. Similarly, you can use red or gold baby potatoes in lieu of the sweet potatoes.
  • Instead of the maple syrup, use honey or brown sugar.

I made a version of this. Instead of making the glaze in the recipe, I used a premade gluten free teriyaki sauce. Everyone in the family loved the meal. I was honestly surprised the sweet potatoes were done in that little time as I am used to baking them for about an hour typically. I will definitely use this again as a base recipe for other fish, veggies, etc.

So glad that you used the recipe as inspiration to create your own meal, Jessie! It’s definitely a flexible idea and one that you can use any number of ways. Thanks for taking the time to leave a note! ๐Ÿ™‚

This is a great recipe! When I make it again I will double the Maple glaze and pour 1/2 over as the recipe states and save a little more for the very end. We did have COHO salmon which is not as fatty as the farm raised salmon… otherwise it may not of needed it. Thank you for this sheet pan recipe – it is a great way to entertain and have the kitchen clean before they arrive.

Agree about doubling the glaze and basting. We removed the broccoli when we added the salmon and then baked for 15 before broiling. So, so good!
