Healthy Chunky Monkey Rice Bowl
Ingredients
- 1 cup Minute® Ready to Serve Whole Grain Brown Rice
- 2 tablespoons milk can substitute with non-dairy milk such as unsweetened vanilla almond milk
- 1 tablespoon peanut butter plus extra for garnish
- ½ banana chopped (plus extra for garnish)
- 1 teaspoon miniature dark chocolate chips
Instructions
- Heat rice in microwave according to package instructions.
- Place rice in a bowl and stir in milk and peanut butter until completely combined.
- Stir in chopped banana.
- Top with chocolate chips. Garnish with additional banana and a drizzle of additional melted peanut butter, if desired.

And yes! I definitely think this would work as part of a healthy diet. It has whole grains, healthy fat, and protein — to keep you energized and full with quality ingredients. If you’re watching calories, just limit the chocolate garnish and the extra PB!
