The perfect party appetizer or side dish, Aunt Bee’s Chile Cheese Squares are a simple make-ahead recipe that has been enjoyed for generations! These bite-sized snacks take advantage of a baking mix for an easy, cheesy Southern treat that will disappear fast.
Are you hosting a Cinco de Mayo gathering? Yes? Well then you’ve come to the right spot.
But you know what? These Chile Cheese Squares would be equally appropriate for a holiday party (thanks to the red and green tucked inside), for brunch with some scrambled eggs, or even as a side dish with your next Mexican-themed weeknight dinner! Let’s just say that these cheesy little bites are hardworking multi-taskers!
If you’ve been reading my blog for any amount of time, then you are well acquainted with my great Aunt Bee, so I won’t bore you with a backstory…again. Her recipes have continued to be some of the most popular on my site, and for good reason (have you seen her 5-Minute Cherry Crunch Dump Cake, her Swedish Meatballs, or her Sweet Potato Casserole?).
Aunt Bee is a genius when it comes to using simple and delicious ingredients to create crowd-pleasing dishes that don’t require a ton of time in the kitchen. These squares are no exception! Thanks to a store-bought baking mix, you only need a few ingredients and about 10 minutes of prep time to pull off this dish.
Aunt Bee’s original recipe called for Bisquick, but I actually prefer the Organic Pancake & Waffle Mix from Immaculate Baking Company, since it has fewer ingredients and I can pronounce them all! Basically…just use what you like!
And while it’s great that these beauties come together in about 10 minutes, I think it’s equally important to note that Aunt Bee specifically says that they freeze well and can be reheated in the oven without any effort at all. In fact, I think that the exact word that she used to describe them on her handwritten recipe card was “indestructible!”
Now THAT’S what makes this an ideal party food! Nobody wants to be rushing around the kitchen on the day of a party worrying about whether or not the food will be ready in time. You can just bake these when it’s convenient and then tuck them away for the appropriate occasion. No fuss, and perfect every time!

Aunt Bee's Chile Cheese Squares
Ingredients
Instructions
- Preheat oven to 350 degrees F. Spray a square baking dish with cooking spray and set aside.
- In a large bowl, mix together Bisquick, milk, eggs, salt, and hot sauce.
- Add cheese, chiles, and pimento.
- Pour into prepared dish and bake for 45 minutes.
- Cut into bite-size squares.
- Note: These can be made ahead and frozen. To reheat, cover lightly with foil and bake in 350-degree oven until warmed through.

When you say a square pan what size of pan are your using? 8×8 will not feed 25 people. I would like to make these. THanks.
Either 8×8 or 9×9. That would make about 25 bite-sized appetizer squares. If you want to feed more or cut into larger squares, just double the recipe and use a 9×13-inch pan. Hope that helps!

I really want to try these! They look delicious. My question is, can you serve at room temperature? I’m planning on making enough for 100 + people as an appetizer. I may not be able to keep them warm.
Hi, Karen! Absolutely! These are great at room temp. You can also make them ahead and keep them in the freezer so that you’re not trying to prep all of your food at the last minute. Enjoy!!

Blair, just found your website recently and wanted to try these. Aunt Bee is a genius, they’re fantastic! I only used 1/4tsp of salt, but followed the rest exactly.
