Before You Get Started

A few quick notes to set you up for success with this recipe:

  • Dice the potatoes into uniform, bite-size pieces. This is the key to evenly cooked, crispy potatoes. Quarter average-size baby potatoes, halve the very small ones, and cut larger ones into eighths. If the pieces are uneven, some will be mushy while others are still hard.
  • Use the dry Italian dressing seasoning mix only. Do not prepare the dressing according to the package instructions. You just need the dry packet of seasoning (I like the Good Seasons brand). The sugar and thickening agents in the mix actually help the potatoes crisp in the oven.
  • Wait to add salt until the very end. The Italian dressing mix and smoked sausage are both salty on their own, so taste everything after cooking before reaching for the salt shaker. You likely won’t need any extra.

How to Make Sheet Pan Sausage and Potatoes

This easy sheet pan dinner comes together in about 40 minutes total, with just 10 minutes of hands-on prep. The oven does the rest!

Step 1: Mix the Seasoning

Preheat the oven to 400°F. Grease an extra-large rimmed baking sheet or spray with nonstick cooking spray. You can line the sheet pan with heavy-duty aluminum foil before greasing for easy cleanup.

In a large bowl, whisk together the dry Italian dressing mix, olive oil, garlic powder, and black pepper until combined. This creates a flavorful coating that helps everything brown and crisp in the oven.

⇢ Skip the extra bowl if you like. Toss everything together in a large zip-top bag instead.

Step 2: Season and Roast the Potatoes

Add the diced potatoes to the bowl and toss until they’re well coated in the oil and seasoning mixture.

Spread the potatoes in a single layer on the prepared baking sheet, leaving a little space between pieces so they crisp rather than steam. 

Roast for 20 minutes, stirring once halfway through so the potatoes brown evenly on all sides.

⇢ Don’t overcrowd the pan. If you’re doubling the recipe, use two sheet pans. Crowded potatoes will steam instead of getting crispy.

Step 3: Add the Sausage

While the potatoes roast, slice the smoked sausage into ½-inch thick rounds. After the potatoes have had their 20 minutes, scatter the sausage slices over the pan. 

Give everything a good stir so the sausage gets coated in the seasoning and oil.

Bake for 10 more minutes, or until the potatoes are crispy on the outside and fork-tender on the inside, and the sausage is nicely browned with a little char on the edges.

Step 4: Garnish and Serve

Garnish with chopped fresh parsley (or other fresh herbs like rosemary or thyme) for a bright finishing touch. Serve hot right off the pan!

Sausage and Potatoes Variations

  • Switch the sausage. Just about any fully-cooked sausage works here. Try pork smoked sausage, beef smoked sausage, Polish sausage (kielbasa), or andouille for a spicier kick.
  • Add vegetables to the pan. Toss sliced bell peppers, broccoli florets, or green beans with a little olive oil and add them during the last 15-20 minutes of cooking. The veggies turn this into a complete one-pan meal.
  • Swap the potatoes. Baby red potatoes or peeled and diced russet potatoes work well in place of baby gold potatoes. No need to peel the baby varieties since the skins are thin and tender.

What to Serve with Sausage and Potatoes

This sheet pan dinner is pretty close to a complete meal on its own, so you really just need something light on the side. A house salad with candied pecans or a simple bagged salad mix is our go-to for a quick finish.

Storage Tips

Leftovers: Store in an airtight container in the refrigerator for 3-4 days.

Reheating: Warm the sausage and potatoes in a skillet over medium-low heat until heated through and crispy again. You can also reheat individual servings in the microwave for about 1 minute, though the potatoes won’t be quite as crispy.

Freezing: Not recommended. The potatoes turn mushy when thawed.

Frequently Asked Questions

How long do you cook sausage and potatoes in the oven?

At 400°F, the total cook time is about 30 minutes. The potatoes go in first and roast for 20 minutes to get a head start, then the sliced sausage joins them for the final 10 minutes. Since the smoked sausage is already fully cooked, it just needs time to brown and heat through.

Can I add vegetables to this sheet pan dinner?

Absolutely. Broccoli, bell peppers, green beans, and zucchini all work well.
