You guys…it’s officially HOT here in Central Virginia! And on a humid, steamy day there’s just nothing that tastes better than icy cold homemade pops!

For less than 40 calories, you can enjoy the cool and creamy blend of peaches, raspberries, and vanilla in a simple, 5-minute treat that's loaded with nutritious, clean eating ingredients!

But these aren’t just any pops — I wanted to showcase some of Virginia’s finest summer produce — peaches and raspberries!

We love to visit the local farms to pick-our-own strawberries, raspberries, blackberries, and peaches at this time of year (or scoop them up by the wagon-full at the farmer’s market), so I’m always looking for new or different ways to enjoy the sweet fruit. These frozen treats are so healthy and so delicious, that you’ll want to eat them for breakfast, snack, AND dessert!

Plus, they’re 100% kid-approved!

Do you see that peach in his hand? Yep, he was stealing the props from my photo shoot while I was still taking pictures! I swear, this juicy fruit is too good to resist!

If you’ve never had a “real” Peach Melba dessert, then let me fill you in: it’s a simple-yet-delicious dessert made with peaches, raspberry sauce, and vanilla ice cream. Summer perfection, right?!

Well I just borrowed those same flavors but put them all into a blender and created these tasty frozen pops…in about 5 minutes FLAT (not including freezing time, of course)! That’s the hardest part…waiting for them to freeze!

To keep the pops light and healthy, while still packed with creamy vanilla flavor, I used my favorite smoothie ingredient: Unsweetened Vanilla Blue Diamond Almond Breeze Almondmilk. Paired with thick, rich Greek yogurt and some additional vanilla extract, it’s the perfect low-calorie replacement for the ice cream in a typical Peach Melba.

Peach Melba Homemade Pops

Total: 5 minutes
Servings 8 -10 pops (depending on the size of your molds)

Ingredients
  

  • 1 cup sliced and peeled fresh or frozen peaches
  • 1 cup fresh or frozen raspberries
  • 1 cup Unsweetened Vanilla Blue Diamond Almond Breeze Almondmilk
  • 1 cup plain Greek-style yogurt
  • 1 teaspoon vanilla extract
  • Optional: 2-4 tablespoons honey for a sweeter pop

Instructions

  • Combine all ingredients in a blender and puree until smooth.
  • Divide mixture among 12 popsicle molds. Place in the freezer for at least 2 hours, or until frozen and ready to eat!

Notes

*To make the pops easy to slide out of the molds, just run the outside of the pop under warm water for about 30 seconds. It should slide right out!
