Good morning, and happy Sunday! We welcomed spring this week with sweet treats, easy meals, and plenty of fresh air. All of the highlights, along with each of our dinners, are included in today’s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what we’ve been up to over the past week — as it relates to our dinners each night. This series gives you a glimpse “behind the scenes” at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.

Now, let’s back up to last weekend…

I met three of my friends for a walk at Mollie’s farm on Sunday morning, Gibbs and Keith went to hit golf balls, and we otherwise had a quiet afternoon at home.

We grilled hamburgers for supper,

which I paired with baked potato wedges,

and a good ole’ house salad.

Plus a 7UP pound cake for dessert, because nothing’s better than having a cake on the cake stand to enjoy throughout the week. Casey and Spencer helped me make this sweet treat — it’s that easy!

Let’s chat about this week’s books! My favorite novel that I finished was An Anonymous Girl by Greer Hendricks and Sarah Pekkanen (the same authors who wrote The Golden Couple). I highly recommend their books if you enjoy mystery-thrillers.

I also read WAKE by Shelley Burr, a mystery set in the Australian outback. It was pretty good, and reminded me a lot of Jane Harper’s The Dry.

The kids returned to school on Monday morning, I met Mollie for a chilly (but sunny) walk, and I spent the afternoon at the computer.

We had two soccer practices on the agenda that evening, so I prepped a skillet of “egg roll in a bowl” using ground pork, and just reheated portions as we needed them throughout the evening. We pair this stir-fry with a side of white rice to make it more filling.

Tuesday included a walk with my friend Ashley, and a regular checkup at the vet for Teddy.

We had creamy Crock Pot salsa chicken for supper, which we used to assemble “chicken burrito bowls.” If you’re looking for a similar chicken recipe that’s not creamy, this Crock Pot Mexican chicken also works well.

I set out rice, corn, spinach, iceberg lettuce, pico de gallo, shredded cheese, and beans, along with tortilla chips and homemade guac so that each kiddo could create his own meal. They always love this!

Fresh air with Keith on Wednesday morning, followed by work for most of the afternoon.

Before the younger boys’ soccer practices that evening, I fed everyone a quick 20-minute meal of linguine with clam sauce.

A morning catch-up with my friend Ashley and our dogs on Thursday…

…and a lunch date with my parents at It’s About Thyme in Culpeper. This was the Greek chicken salad with a side of focaccia, which was a nice option on an 80-degree day!

Gibbs had golf that afternoon, so I prepped dinner in advance so that it would be ready when we returned home hungry. On the menu: a pot of chicken and stars soup,

It rained off and on most of Friday, so I spent the bulk of my day in the kitchen testing new recipes.

We needed a very early supper before I took Spencer to his soccer practice in Charlottesville, so I just reheated some leftovers from my cooking that morning — a ground beef and cornbread casserole similar to this one!

Soccer was canceled on Saturday (thanks to more rain), so we ran errands instead, stopped for lunch at the kids’ favorite Chinese buffet in Charlottesville, and visited with my friend Adria that afternoon.

I made crescent roll pizza pockets for supper,

The sun came out that evening, so we saw blue skies, apple blossoms,

and lots of soccer in the yard…plus March Madness basketball on TV.

  2. I love your jadeite cake stand. How did you find a cover to fit it? I’m headed to Richmond on April 4 for my annual antiquing day. I meet a friend who also enjoys the “ thrill of the hunt”. We alternate each year… I go there, she comes here. I did go there last year and the main store I really wanted to go to was Richmond Vintage Glass and it was closed the day we went. I told Nancy, I’m coming back to Richmond again next year and we’ll make sure it’s open the day I come.
    I see lots of Jadeite but haven’t bought any yet. My big purpose is to find Stangl.
    I probably won’t try the roasted green bean recipe. I LOVE the Arkansas green beans and often make them for company. I still have the large can of green beans in my cupboard for our Christmas dinner that didn’t happen since I came down with a nasty case of Covid on Dec. 22.

    1. Hi, Debbie! Your antiquing day sounds lovely! The cake stand came with the glass dome, which is so convenient. I believe that I originally got it from The Pioneer Woman’s line at Walmart. Not sure if it’s still available or not, but I’ve been very impressed with the quality. Have other similar cake stands that cost 2-3 times as much, but it’s hard to tell the difference! 🙂
