Good morning, happy Sunday, and happy Father’s Day to all of the special men out there! This week included blueberry picking, pool time, and golf — among other summertime fun. All of the highlights from the past few days, along with our easy dinners, are included in today’s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what we’ve been up to over the past week — as it relates to our dinners each night. This series gives you a glimpse “behind the scenes” at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan. Now, let’s back up to last weekend…

Sunday started with an early morning walk with two of my friends at Mollie’s farm.

Then we had a fun visit with my brother-in-law and my nephew. We played outside, had hot dogs and watermelon for lunch, and flew Keith’s drone over the house. In fact, the image below is courtesy of the drone!

Keith smoked Beef BBQ for dinner that night…

…which we served with Aunt Bee’s 3-Ingredient Cheesy Potato Casserole,

A warm and sunny Monday morning!

We met friends at the pool, ate a picnic lunch,

and then came home so that Spencer and Gibbs could participate in their online computer coding camp.

I served marinated chicken thighs for dinner, along with rice and sauteed zucchini.

Tuesday was beautiful and less humid…

…so we met my mom in Charlottesville for a couple of rounds of putt-putt golf, followed by lunch at Subway.

I spent some time baking that afternoon — including a loaf of Banana Bread (this time with chocolate chips instead of nuts),

We had pork tenderloin medallions with corn, tomatoes and bacon,

…plus skillet cornbread and Caesar salad on the side.

As far as books go, I’ve got a fun summer “beach read” to share with you this week. In Five Years by Rebecca Serle is a striking, powerful, and moving love story following an ambitious lawyer who experiences an astonishing vision that could change her life forever. It was unexpected, surprising, and kept me turning the pages…

I tackled some work projects on Wednesday morning, so the boys entertained themselves with a movie and Lego cleanup while I was busy.

We took advantage of a beautiful day and spent the afternoon at the pool, and then came home for an early dinner before Spencer’s last soccer practice of the season.

Keith wasn’t returning home until late that night, so I kept our meal really simple. The kids wanted pesto pasta, while I opted for a tomato sandwich with tomatoes and basil from the garden! Plus a salad and some pretzels on the side…

We met my friend Ashley and her two girls for blueberry and black raspberry picking on Thursday morning.

I needed buttermilk for the biscuits with dinner that night, so we also made a quick stop at Yoder’s Country Market (and got ice cream for the boys).

Supper was one of my childhood favorites, which my mom called “Chuck Wagon Mac”

…along with buttermilk biscuits and a simple green salad.

I took the boys out to the school playground on Friday morning for some fresh air…

…and then spent the afternoon in the kitchen while they played here at the house.

I baked a loaf of bread to have with dinner that night, and canned a batch of Blueberry Jam.

Dinner was so much fun! We took a platter of Frogmore Stew out to the newspaper-lined picnic table in our backyard for a summer Lowcountry boil.

This is seriously one of the easiest meals…with just 10 minutes of prep!

Plus a loaf of crusty Dutch Oven Bread on the side!

Saturday was a very full day…

…starting with two soccer games in the morning, followed by pool time and dinner at my parents’ house.

Mom served fried chicken, potato salad, fruit salad, veggies and dip, and blueberry muffins for supper,

plus a peach galette with vanilla ice cream for dessert. I need to share her galette recipe this summer…it was delicious!

And that brings us to today! I’m off to celebrate Father’s Day with Keith and the boys, so I hope that you have a wonderful week ahead. Thanks for joining me here!

      1. I have never heard of Frogmore Stew but I just read a book this week and they made it. It was so surprising to see it on your weekly recipes. I think it’s a sign I need to make it.
