Will you have some left-over Thanksgiving turkey to enjoy? Or maybe just some extra cooked chicken in your refrigerator? Accented by sweet, tart apples, this Turkey, Bacon, and Cheese Crostata comes together in just minutes — thanks to the help of a refrigerated pie crust!

Happy Monday, friends! I hope that you all had a great weekend! Our Saturday and Sunday were busy with family activities, friends’ birthday parties, and celebrating this little guy — who turned 1!

It’s so hard for me to believe that a full year has passed since he arrived on the scene! What a ride life with 3 little boys has been! He also decided that he would eat nothing other than Sour Cream and Onion Potato Chips and a cupcake for his birthday lunch. Hey, whatever suits the birthday boy (and believe me — he made up for it at dinner that night!).

And now on to today’s recipe!

How can you go wrong when you combine turkey (or chicken) with bacon and cheese?! Since I love any dish that combines sweet and savory elements, I also added some fresh Granny Smith apple and finished off the warm crostata with a delicate drizzle of honey. Is your mouth watering yet? Believe me, this only sounds fancy…

If you’re not familiar with a crostata, it’s really just a rustic (read: messy, less-perfect) version of a pie. You don’t have to worry about perfectly crimped edges, or even pulling out a pie plate! A crostata is an Italian baked tart, similar to a French galette, and basically just an open-faced sandwich! Now it’s not so intimidating, right?

I’m a big fan of refrigerated pie crusts, which I put to good use here. No flour, no rolling pins, and…not even a single pie dish in sight! Just unroll the dough, place it on a baking sheet, and top it with a few ingredients. Fold up the edges, bake, and you’re done! You will have a lunch or dinner to impress your guests (or your husband and children, in my case)…with very little time or effort on your part. After all, who wants to spend hours in the kitchen preparing EVEN MORE FOOD when we’ve just finished with a giant Thanksgiving meal? Not me. So here you go…the quick and easy answer to what you should do with your left-over meat!

Turkey, Bacon, and Cheese Crostata

Ingredients
  

  • 2 refrigerated pie crusts one 14.1 ounce package
  • 1 cup thinly sliced cooked turkey or chicken
  • 8 ounces shredded Cheddar cheese
  • ÂĽ lb. about 7 slices cooked, crumbled bacon
  • 1 small Granny Smith apple peeled and thinly sliced
  • Honey optional (for drizzling)

Instructions

  • Preheat oven to 425 degrees F.
  • Unroll the pie crusts and place on baking sheets.
  • In a large bowl, toss together remaining ingredients.
  • Divide turkey mixture evenly over the pie crusts, leaving a 1 ½-inch border.
  • Gently fold the border over the turkey mixture to enclose the dough, pleating it to make a circle.
  • Bake the crostata for 15-20 minutes, until the crust is golden, the cheese is melted, and the ingredients are heated through.
  • Allow to cool slightly, drizzle with honey, slice, and serve warm.
