Side dishes are kind of the forgotten necessity at meal time, right? I mean, how often do you actually sit down and plan your dinner around the sides? And veggies just aren’t usually placed in the same drool-worthy category as baked goods, meats, or desserts. All of that said, these side dishes are still a regular part of our weekly meal plan. No, we don’t want to spend much time working on them (my focus is always on the main course!), but we still need to haveย somethingย to serve!

I try to offerย a fruit or vegetable option for my family at every meal. A favorite in our house has always been broccoli! And while I could get away with a cold salad or chopped up raw veggies from our garden during the summer months, at this time of year it’s much more appetizing to have a warm dish. This Oven-Roasted Broccoli and Cauliflower comes together with less than 5 minutes of preparation, roasts for about 10 minutes, and tastes delicious every time. Plus, it only requires 3 ingredients! Sound too good to be true?

Oven-Roasted Pesto Broccoli and Cauliflower

Ingredients
  

  • 1 head cauliflower divided into florets
  • ยฝ head broccoli divided into florets
  • 1 8 ounce jar store-bought pesto

Instructions

  • Preheat oven to 450ยฐF.
  • In a large mixing bowl, gently toss together cauliflower, broccoli, and pesto until well combined.
  • Place on a baking sheet (I like to line my baking sheet with aluminum foil for easy clean-up) and roast for 10-15 minutes, or until crisp.
