This week the kids and I are focusing on a new season: winter. Gibbs requested pancakes for his birthday breakfast the other day and this fun treat was my “seasonal” response.
There’s not even a recipe for this one. Every couple of weeks I just make a batch of miniature pancakes (from a mix) and then freeze them for quick weekday breakfast options. About 30 seconds in the microwave and they’re ready to go.
On his birthday, I served Gibbs his Snowman Pancakes on the red plate. The very same red plate from my own childhood. I vividly remember feeling incredibly excited when we had birthdays, good report cards, or other special reasons for my mom to pull out this dish.
I must say, though, Gibbs wasn’t too concerned with the plate. He was much more interested in the chocolate that he was allowed to eat for breakfast.
We just dusted his pancakes with “snow” (powdered sugar) and decorated with M&M’s, chocolate chips, and an orange jelly bean.
Even though it wasn’t his birthday, Casey liked this treat too…
