Good morning, and happy Sunday! This week included a birthday celebration, summer-like temps, and a rainy soccer tournament. You’ll find all of the highlights from the past few days, along with each of our dinners, in today’s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what we’ve been up to over the past week — as it relates to our dinners each night. This series gives you a glimpse “behind the scenes” at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.
This Week’s Meals
Now, let’s back up to last weekend…

Keith and I spent the day in Richmond with Spencer for his soccer game, while Casey went to the church potluck with Khloe, and Gibbs went to the movies with a friend.

Once we were all back home for supper, we celebrated Casey’s 15th birthday with gifts and a cookout — grilled hamburgers,

my grandmother’s easy potato salad,

and a corn salad.

For dessert, he requested key lime pie (made with a graham cracker crust instead of the saltine crust).

Let’s chat books! This week I finally read the book that everyone seems to be talking about right now: Yesteryear by Caro Claire Burke.
In this novel, a polished tradwife influencer who has built an empire around the idea of the perfect traditional family suddenly wakes up in what appears to be a brutally realistic version of 1855. As she struggles through the exhausting realities of frontier life without modern comforts, she starts questioning whether she’s trapped in a twisted reality show, a punishment, or something even darker.
It’s sharp, funny, unsettling, and an entertaining satirical look at social media, gender roles, and the gap between curated fantasy and real life. Not my favorite book of the year, but interesting and worth a read!

Monday morning kicked off the boys’ last full week of school (and they are so ready for summer break)!

I got out for an early walk, and otherwise had a quiet work day at the house. I also prepped dinner in advance so that we could reheat everything throughout the evening.

I took Spencer to practice in Charlottesville, Casey had practice at the high school, and Gibbs went to work at the golf course. Dinner was simply pasta with spaghetti sauce,


and the best green salad tossed with red wine vinegar salad dressing.

I met Mollie and Adria for a walk on Tuesday morning,

and stopped at Yoder’s for some groceries afterwards.

It was another busy evening — a round of golf for Gibbs, a soccer game at the high school for Casey, and practice in Charlottesville for Spencer — so I prepped dinner in advance (again). That way I could just pop it in the oven for a late meal when we finally returned home.

On the menu: 4-ingredient chicken taquitos…

…with a side of tortilla chips, guacamole, sliced bell pepper strips, and this Mexican street corn chopped salad kit.

After a walk with Ashley on Wednesday, I spent the rest of the morning in Charlottesville for my monthly Costco run.

Once Gibbs was home from work, we ate a quick meal before youth group later that evening. Garlic butter salmon came together in minutes…

…paired with a baguette and Caesar salad from Costco, plus a pan of Arkansas green beans.

Ashley and I walked our dogs together again on Thursday, before I made my way up to Culpeper for a dentist appointment.

After a very hot, very sunny first part of the week, rain and clouds rolled into Virginia that evening…which meant canceled soccer for both of my younger boys. Instead, we had a quiet evening at home (ahhhh!).

For supper, I paired slow cooker bbq beef sandwiches with coleslaw that I picked up at Yoder’s and a bag of potato chips. An easy meal that the boys can always agree on!

Friday was a cool, rainy day, so I made it to Pilates with Ashley that morning before spending the rest of the day working indoors.

Gibbs had a golf lesson that evening, and Casey’s soccer game was canceled thanks to the crummy weather. I served roasted lemon chicken for dinner…

…along with garlic roasted broccoli, rice, and a loaf of cheddar sourdough bread from Yoder’s.

Spencer’s team is playing in a soccer tournament up in Northern Virginia for the holiday weekend, so we spent all day Saturday on the rainy sidelines…

Take-out pizzas got the job done for supper when I was too tired to deal with anything else!

The pie with the saltine crust was developed by Bill Smith, chef at Crook’s Corner restaurant in Chapel Hill. He calls it Atlantic Beach Pie named after the beach he went to in NC. It is said that citrus desserts need to be eaten after seafood meals. He took the lemon pies served there and changed the recipe to use a saltine crust, equal amounts of lemon and lime juice, and whipped cream topping instead of meringue.
I am still the holdover of graham cracker crust, lime, and a meringue topping… like the pie served at Blue Heaven in Key West.
I have a great recipe for meringue that you stir into the meringue some Marshmallow Crème… or some call it Marshmallow Fluff. It gives the meringue delicious depth.

My husband and I were married on the beach in Atlantic Beach, NC in 2006. It was chilly, windy day, and sand was everywhere. I’m grateful we were able to make that trip and have that experience. It is a beautiful town.
I’m curious what are some of the things that you always get when you do your Costco run? What do you recommend ?
Hi, Lisa! Some of our regulars include steak, salmon, rotisserie chicken, fruit, salad kits, bakery baguettes and muffins, and lots of snacks like tru protein bars that my boys like, archer beef jerky sticks, purely Elizabeth granola, olive oil, peanut butter, and coffee beans.
Happy Belated Birthday to Casey. Ah, I remember being 15, and it was a long time. It sounds like you all had a great week, and the recipes look delicious too. Thanks for sharing your lives with us. Your blog is something I look forward to reading every Sunday morning.
