Good morning, and happy Sunday! This week included more summertime fun, lots of World Cup soccer, and an entertaining thriller. You’ll find all of the highlights from the past few days, along with each of our dinners, in today’s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what we’ve been up to over the past week — as it relates to our dinners each night. This series gives you a glimpse “behind the scenes” at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.

Now, let’s back up to last weekend…

Sunday included a walk, church, more sour cream blueberry muffins (the best!), and lots of World Cup soccer-watching.

Let’s talk books! This week I read Freida McFadden’s latest thriller, The Divorce. As always, it was totally unhinged and incredibly entertaining!

In this novel, Naomi’s seemingly perfect life falls apart when her husband leaves her, drains their finances, and starts a new relationship…but she’s not willing to walk away quietly. What begins as an obsession with her ex-husband’s new girlfriend leads Naomi down a path filled with shocking secrets, unexpected twists, and growing danger. Fast-paced and impossible to put down, it’s a suspenseful thriller about betrayal, revenge, and just how far someone will go to hold on to the life they think they deserve.

Monday brought beautiful, cooler, less-humid weather (thank goodness)!

The boys requested a Costco lunch, so we paired that with a much-needed shopping trip for some staples. Somehow they managed to throw lobster tails and steaks into the cart, too!

Gibbs played golf that afternoon, and then we sat down for sheet pan chicken fajitas for supper,

plus tortilla chips and guac on the side (always)!

A walk with Ashley on Tuesday morning,

a stop at Yoder’s, and recipe testing in the kitchen.

I took Spencer over to the high school to kick the ball around…

…and we had seafood salad on croissant sandwiches with potato chips and fruit salad for an easy supper.

And for dessert, one of the kids’ favorites: easy banana pudding! Is there anything more perfect on a summer night?!

Wednesday was similar to the day before: a morning walk, a lot of work in the kitchen, and soccer in the afternoon with Spencer.

Keith and the older boys played golf that evening, so Spence and I were on our own for supper. I made egg roll in a bowl with rice, and we continued our World Cup-watching marathon.

I spent Thursday morning at Mollie’s farm walking and catching up…

Gibbs went work, I took Spencer to soccer training, and we had dump-and-bake chicken parm casserole for supper.

and a simple green side salad.

Keith was off work on Friday for the Juneteenth holiday, so his friend came to town for an overnight visit.

They played a round of golf, we all watched the US men’s soccer game, Gibbs had a golf lesson, and I took Spencer back to Charlottesville for another evening of training.

Once we were all home, Keith grilled hamburgers (at Casey’s request, I used wagyu beef that I picked up at Costco — so good!),

And that brings us to the weekend! The boys were back out on the golf course early on Saturday morning for a round with friends, while I did some cooking and photographed a couple of recipes.

We met friends and Keith’s parents for dinner at Miller’s Downtown in Charlottesville (I had a delish cobb salad)…

…and then went to the Charlottesville Blues game.

    All the no bake desserts look like such a good potluck idea right now, it’s supposed to be very hot again by next weekend, so with the monthly fellowship meal coming up, I might be preparing one of them!

Happy Fathers Day to all the father’s in your life…it’s Father’s Day here and in the UK as well…I lost my Dad over 30 years ago and I miss him every day…have a great week…
