Good morning, and happy Sunday! This week included golf matches, soccer tournaments, and quick weeknight suppers. Youโll find all of the highlights from the past few days, along with each of our dinners, in todayโs roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what weโve been up to over the past week โ as it relates to our dinners each night. This series gives you a glimpse โbehind the scenesโ at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.
Now, letโs back up to last weekendโฆ

Sunday started with a sunrise walk, followed by church, and then Spencer’s soccer game that afternoon.

We had honey lime grilled shrimp for supper,

which I served with sauteed zucchini, a loaf of Ashley’s sourdough bread, and some rice.

Shall we chat books? I wanted to squeeze in at least one more “beach read” before the end of the summer, so this week I read One Golden Summer by Carley Fortune. It was exactly what I expected — a fun, breezy, predictable romance that I could easily cruise through. A nice escape!

The kids returned to school on Monday morning,

I stopped at Yoder’s for some meat, cheese, and local peaches,

and then headed up the road for a walk before settling down at my computer to work for the day.

The temps here in Virginia were a little bit cooler this week, so I thawed some hamburger potato soup from the freezer and enjoyed that for multiple easy lunches. Plus toasted sourdough with apple butter on the side!

When Gibbs was home from golf practice that night, we had 4-ingredient chicken taquitos for supper,

which I paired with guacamole, chips, salsa, and corn.

Ashley and I walked our dogs together on Tuesday morning, I had a Zoom meeting mid-day, and I prepped dinner in advance knowing that we would be coming and going all evening.


Spencer had soccer practice and Gibbs had a golf match, so dump-and-bake sesame chicken noodles seemed like an easy option to bake ahead of time and then just reheat as needed. Plus steamed broccoli and egg rolls on the side, which we could quickly toss into the air-fryer. This is consistently one of the boys’ favorite meals (and it couldn’t be more simple)!

Wednesday was full of appointments — my annual physical with the doctor that morning, and an afternoon work meeting to finalize cookbook details (launch day is coming VERY soon)!

I walked Teddy after lunch, Keith took Spencer to soccer practice, and Gibbs had golf.

Dinner was a meal that we could once again eat at different times, perfectly cozy for a crisp, cool evening: Wendy’s chili served on baked potatoes with all of the toppings and corn chips on the side for scooping — just like at the restaurant!

I tested a new fall dessert recipe on Thursday morning, and then met Mollie for a walk.

Plus a lunch date with Keith at Piedmont Deli! I got the “Apple Harvest” sandwich, which was the perfect pre-fall treat: honey baked ham, provolone, lettuce, tomato, and apple butter mayo on wheat toast. As soon as he saw it on the specials board, Keith knew I’d order it. Hah!

I left a 4-ingredient ravioli casserole and garlic bread for Keith and the older boys to enjoy for dinner after their round of golf, while Spence and I headed into Charlottesville for an appointment. Spencer wanted chicken tenders and Texas toast from Raising Cane’s while we were in town…


Adria came over for a walk on Friday morning once our kids were off to school, and then I spent the rest of the day getting work done in anticipation of a very full weekend.

Soccer practices for Spencer and Casey were canceled that evening, so we had a late supper once Gibbs was home from golf practice: Crock Pot pulled bbq chicken sandwiches with a side salad and potato chips.

And that brings us to Saturday! We were up and out of the house before the sunrise that morning to get to the first of Spencer’s soccer games in Richmond. They’re playing in a tournament all weekend, which means multiple long days on the fields.

We returned home just before supper, so I took the night off from the kitchen. We picked up pizzas for the crew and spent the rest of the evening watching college football!

attending. How many pounds of ravioli do you think I should make?
I do make my own meat sauce, so there will be meat “on the side”.

Hi, Elaine! I think it’s safe to assume about 6 servings per pan, so I would double the recipe and make 2 pans if you’re serving it alongside other entrees (like a holiday ham or a roast turkey). If the ravioli is your main entree, I would triple the recipe to be safe and make 3 pans. Hope that helps!
When you make the crock pot apple butterโฆ.
Do you cook it on Low or High?
I think Low would be best BUT if I start it first thing in the morning and it cooks all day.. then we donโt know how long it will take to decrease with cover offโฆ then start the canning process??? Is it midnight when you finish if you cook on Low?
I donโt feel comfortable letting it cook all night while we are sleepingโฆ
What do you do?
Hi, Debbie! I let it cook all night on LOW while we’re sleeping. ๐ If you’re not comfortable with that option, just do it on HIGH in the morning. They’ll be great!

Hope you enjoy the noodles! Just a note: it’s a fairly small portion, so you might need to double or triple the recipe if you’re feeding hungry teenagers.
