Good morning, and happy Sunday! This week included a holiday, frigid temps, and cozy suppers at home. Youโ€™ll find all of the highlights from the past few days, along with each of our dinners, in todayโ€™s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what weโ€™ve been up to over the past week โ€” as it relates to our dinners each night. This series gives you a glimpse โ€œbehind the scenesโ€ at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.

Now, letโ€™s back up to last weekendโ€ฆ

The weather was really crummy on Sunday morning (complete with rain, sleet, and snow), but we still managed to get out for church and then to Spencer’s indoor soccer game after lunch.

Gibbs requested cast iron deep dish pizza for dinner, which was the perfect meal for a cozy evening of football watching. I used fresh store-bought pizza dough, but you can also make your own easy pizza dough for this recipe when time allows.

Shall we chat books? This week I read In the Shadow of the Greenbrier by Emily Matchar — an entertaining historical fiction about four generations of families in White Sulphur Springs, West Virginia, many of whom worked at the famous resort.

Monday was a holiday, so the boys had the day off from school.

Casey joined me for an early walk up the road, and the boys helped Keith split firewood after lunch.

Dinner was a late meal after Spencer’s soccer practice: cheesy smoked sausage pasta with broccoli and crescent rolls on the side, plus the college football championship on TV!

It was so cold on Tuesday that the boys had a two-hour delayed start for school. Meanwhile, I spent the morning in the kitchen and jumped on a Zoom meeting that afternoon.

We had slow cooker chicken tortilla soup for supper, along with tortilla chips, salsa, and guacamole on the side. It was like a winter version of Taco Tuesday!

The kids had another late start at school on Wednesday,

and I swung by Yoder’s for our weekly staples on the way home. So many fun Valentine’s Day treats…

Deli meat, buttermilk, peanut butter, whoopie pies, fudge, our favorite Virginia-made potato chips, and more!

We had these ground beef and cabbage bowls with rice for supper (a personal favorite that reminds me of my grandmother’s stuffed cabbage rolls but much easier), although that’s not something the boys enjoy — so they got fried chicken sandwiches from the freezer! Then Casey was off to youth group and the rest of us stayed close to the fire.

I met Ashley for a walk on Thursday morning, and then made my way to Culpeper to run some errands before lunch.

Everything is so gray at this time of year. Can’t wait to see some green again!

Golf lessons were canceled all week due to the weather, so I didn’t have to rush quite as much to get dinner on the table that evening. We had dump-and-bake shrimp marinara, along with garlic bread and a side salad. An easy meal that keeps everyone happy!

Friday included a check-up at the vet for Teddy, a Pilates class with Adria, groceries, and work at the computer.

I took the easy route for supper and just reheated our favorite beef chili recipe from the freezer.

A walk with Adria on Saturday morning…

…and cocktails at our neighbors’ house that afternoon. We eventually headed up to Culpeper for smash burgers and the best crispy seasoned fries at Graze to Griddle. Such a fun Saturday night!

    Iโ€™ve been getting your Sunday morning emails on both of my Gmail accounts. One I use just for Amazon and other online shopping and one email is personal. I deleted the shopping email this morning.

    I love Yoder’s! I so wish we had a great market close in the Lake Norman area of NC. We never visit Madison without visiting Yoders. They have the best of everything!
