Good morning, and happy Sunday! This week we celebrated Easter, and made the return to school and work after a fun Spring Break. All of the highlights from the past few days, along with each of our dinners, are included in today’s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what we’ve been up to over the past week — as it relates to our dinners each night. This series gives you a glimpse “behind the scenes” at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.

Now, let’s back up to last weekend…

We started our Easter Sunday with a few treats for the boys, along with homemade waffles, berries, and whipped cream for breakfast.

We then drove down to Nelson County to spend the day with my parents.

Searching for golf balls is even more fun than hunting for eggs!

Mom served a delicious holiday lunch, including brown sugar bourbon-glazed ham, grilled turkey breast, rolls, my grandmother’s easy potato salad, veggies and dip, fruit salad, and deviled eggs.

And for dessert, a slice of my mom’s coconut cream cake and a slice of my aunt’s carrot cake!

We were back home in time for supper, so Keith grilled shrimp

…which I paired with rice, blueberry corn muffins,

As far as books go, I wanted to share a fun novel that I loved this week: Someone Else’s Shoes by JoJo Moyes. This quick read is smart and well written, and the characters are relatable. Highly recommend!

Back to the regular work and school routine on Monday morning!

Spencer had soccer practice that evening, so I fed everyone an early supper beforehand. On the menu: dump-and-bake veggie meatball casserole, along with frozen garlic breadsticks on the side.

Tuesday morning sunshine!

I spent most of the day in the kitchen testing and photographing new recipes, and then took Spencer to his orthodontist appointment that afternoon.

We had one-skillet “egg roll in a bowl” for supper, which I prepared with ground pork (although ground beef and ground turkey are also good). Plus rice on the side to make the meal more filling!

After a morning walk with my friend Mollie, Wednesday was largely devoted to Zoom meetings. I try to “batch” my work as much as possible for efficiency — scheduling calls, photography, writing, editing, etc. on separate days. I would have much rather been outdoors enjoying the gorgeous 80-degree weather, but that wasn’t possible on Wednesday!

Spencer and Casey had back-to-back soccer practices in Charlottesville that evening, so we needed a very early dinner before we left the house. Keith requested pulled pork nachos, which I made quickly by using bbq pulled pork that I purchased from Yoder’s. We also had corn, beans, and guacamole on the side. Such a delicious, easy meal for busy nights!

I met Ashley for a walk on Thursday morning — another beautiful spring day.

We had oven-fried Nashville hot chicken for supper, along with chips, pickles, and coleslaw, and then Keith took Casey to another soccer practice that evening.

After a short walk with Teddy up the road, I spent most of the day at Spencer’s school helping with a 3rd grade activity.

We were scattered in all directions that evening — Gibbs and Keith to play golf, and Casey, me, and Spencer in Charlottesville for Spencer’s soccer practice. Since we left the house around 4:00 p.m. and didn’t get home until about 8:00 p.m., I treated the younger two boys to Chik-Fil-A for dinner while we were in town.

And that brings us to Saturday! It was a very full day, including two soccer games, the golf driving range, and recipe testing in the kitchen.

  3. Good morning Blair
    I love to make waffles. I also separate the eggs and fold in the beaten whites last. But I also add vanilla extract. I make my own extract… 6, cut in half and split, vanilla beans into 1 pint of Vodka or Brandy… I like to have both varieties to choose from.
    We also have chickens so I usually make my deviled eggs with very fresh eggs. I don’t think old or new eggs makes a difference since I would hard boil several eggs brought in from the chicken house on the same day and some will peel and some won’t!!
    I found this way to hard boil eggs and it works with every egg… new or older… we really never have old eggs in the refrigerator..
    Hard Boiled Eggs
    Bring water to a boil
    Put eggs in boiling water
    Boil high 30 seconds
    Turn down to very low, cover, and cook for 13 minutes
    Put eggs into water with lots of ice cubes and let sit for 15 minutes.
    Then start peeling and often the shells come off in just 2 pieces!!

      Your vanilla extract sounds great, too. I will definitely try that. I’ve had it on my “to do” list for years, but just haven’t actually taken the time. Thanks again!

      1. Hint about hard boiling the eggs…
        Hard boil more than you will need for the amount of deviled eggs you want. Even though Billy feeds the chickens what’s needed to make their shells hard… there’s always 1 chicken continuously lays thin shelled eggs. When boiling them sometimes those shells will crack and whites will come out. Can’t use those for deviled eggs but I use them to make egg salad.

    I meant to ask you last week, about the Gettysburg trip. How long did the self-driving tour w/ app take you? I’ve looked at a few tours (there’s a double decker one I thought would be fun for the kids), but they are all 2-hours, & I don’t know if the kids would want a 2-hr tour.

    1. Hi, Renee! I don’t remember exactly how long it took, but I’d estimate maybe 1 hour. We didn’t get out and walk around at too many of the stops, though. You could easily make it take MUCH longer, but our boys weren’t into that. 🙂 We just loved the flexibility of being able to pick and choose our own pace, which is obviously different than a group tour. Hope that helps!

  5. Hi Blair – I always look forward to your emails each Sunday. You are so busy going here and there with your boys. I remember doing that with my two sons and now I am fortunate to be able to take my five year old granddaughter to swim class and princess ballet class. So blessed to do it again but this time with girls! No telling what the 2 year old will be involved with!

  6. Hoping you and family have a blessed Sunday. Your Easter lunch was very close to ours was fun being with the family. I am anxious to try the tip on boiled eggs. We love them except for peeling. We have been in your state for vacation and loved all the beauty of it and the history. Right now we have tulips, Iris, many similar flowers blooming and Bradford pear trees. All our grass here is green now also and humming birds are out. How you and all your viewers have a great week in meals.
