Good morning, and happy Sunday! We welcomed May with fresh blooms, quick weeknight suppers, and lots of kids’ activities. You’ll find all of the highlights from the past few days, along with each of our dinners, in today’s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what we’ve been up to over the past week — as it relates to our dinners each night. This series gives you a glimpse “behind the scenes” at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.
This Week’s Meals
Now, let’s back up to last weekend…

We spent a cloudy Sunday on the soccer fields — first for Spencer’s game in the morning, and then for Casey’s in the afternoon.

I planned a meal that I could prep in advance and then just pop in the oven when we needed to eat: cream cheese chicken enchiladas…

…with easy homemade guac, tortilla chips, and salsa.

Book time! This week I read The Exes by Leodora Darlington, a twisty and unpredictable mystery-thriller from Book of the Month.
In this novel, Natalie thinks she has finally found her happily-ever-after when she marries James; however, her complicated history with a string of dead exes starts creeping back in with some very dark secrets.
What begins as a twisty domestic thriller turns into a suspenseful game of paranoia. You’re constantly wondering whether Natalie is being manipulated or hiding something herself! It’s the kind of book that keeps us second-guessing everyone right up until the end…

The kids returned to school on Monday, while Keith and I got back to work.

It was a day of cooking and photographing recipes in the kitchen for me, before I picked Casey up from school for a doctor’s appointment.

Spencer had a few days off from soccer practices during the first half of the week, so our schedule was much lighter. Once Casey was home from his practice, we had Mississippi pulled pork for supper,

plus homemade coleslaw and pasta salad.

Wednesday started with an Orange Julius for the kids…

I met Mollie for a morning walk, and otherwise spent most of the day testing recipes in the kitchen.

Unfortunately, Casey stayed home sick that day, so he missed his soccer game that night. When Gibbs got home from playing golf with a friend, I served carne asada tacos for supper with tortilla chips, salsa, and sauteed peppers and onions.

Ashley and I walked our dogs together on Wednesday morning, I took Teddy to the groomer, and then had another day of work in the kitchen.

Baked a loaf of zucchini bread (which disappeared within a few hours)!

The older boys played in a volleyball fundraiser tournament at the high school that evening, so dinner was served in stages: bbq chicken wraps, plus onion rings, baked beans, and corn on the side.

After another walk with Ashley on Thursday morning, I went to watch Casey and his classmates present their second semester projects.

In between Gibbs’ dentist appointment, Casey’s early soccer practice, and Spencer’s late soccer practice, I made this easy baked spaghetti for supper. Plus a side of garlic breadsticks from the freezer and a simple green salad…

Friday, and the peonies were starting to bloom…


After some rain, everything was lush and full of life!

Gibbs had golf that evening, while Casey had a soccer game at the high school.

For a late dinner when we were all back at the house, I popped a couple trays of Kentucky Hot Brown sliders into the oven. A fun meal in honor of Derby weekend, but they’re also a great make-ahead option at any time of year!

On the side: potato chips and the best homemade ranch dip with cut-up veggies.

Plus my mother-in-law’s Texas sheet cake for dessert…

And that brings us to the weekend! Keith and Casey were up early for a round of golf on Saturday, while Gibbs headed out for the first day of his first job (at a golf center).

My day included grocery shopping, weeding the flower beds, laundry, cleaning, and a walk. These flowers were lining the road and they smelled so good!

Casey went to a soccer game with Khloe that afternoon, and I took a night off from the kitchen. We picked up a boatload of Chinese takeout, including moo goo gai pan, lo mein, sesame chicken, and kung pao chicken, and then watched the Derby.

The peonies look beautiful, we had white ones near my childhood home, and looking at your pictures reminds of those happy sights and smells from years ago.
