Slow Cooker Beef Barbecue

Equipment

Ingredients

  • 1 small onion, diced (about 1 cup)
  • 1 boneless beef chuck roast (about 2.5 - 3 lbs.)
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 ¾ cups barbecue sauce (I use an 18-ounce bottle of Stubbs Original)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons liquid smoke (optional)
  • Optional, for serving: sandwich buns, coleslaw, pickles

Instructions

  • Spray the liner of a slow cooker with nonstick cooking spray. Place the onion in the bottom of the slow cooker.
  • Pat the beef dry. Season on both sides with garlic powder, salt, and pepper.
  • Place the beef on top of the onion in the slow cooker.
  • In a medium bowl, whisk together the barbecue sauce, Dijon mustard, Worcestershire sauce, and liquid smoke (if using).
  • Pour the sauce over the beef. Cover and cook until the beef shreds easily with two forks, about 8-10 hours on LOW or 4-5 hours on HIGH.
  • In a separate bowl or on a cutting board or rimmed sheet pan, shred the beef with two forks. Return the meat to slow cooker and stir it into the sauce.
  • Serve the meat on sandwich buns and garnish with coleslaw or sliced pickles, if desired.
