Ingredients

  • 3-4 cups sliced fresh peaches, canned and drained peaches, or frozen (thawed and drained) peaches (peeling the peaches is optional, but not necessary)
  • 1 ¼ cups Bisquick (or other all-purpose baking mix)
  • 1 cup sugar
  • 1 cup milk
  • ½ cup (1 stick) salted butter, melted
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • For serving: vanilla ice cream

Instructions

  • Preheat the oven to 350°F. Grease a 10-inch cast iron skillet or another 2-quart baking dish (such as an 11 x 7-inch pan) with nonstick cooking spray. Arrange the sliced peaches in the prepared dish.

  • Bake, uncovered, for about 1 hour (or until golden brown and set). The cobbler is done when the topping is totally set (like a cake), it isn't jiggly in the middle, and you can’t see any batter bubbling. If the top of the cobbler starts to get too dark, cover loosely with foil until it's cooked through.

Notes

  • If you don't have Bisquick, any similar all-purpose baking mix will work. I have also tested this recipe with Krusteaz mix, and I bet a similar mix from Aunt Jemima or other brands will work, too.
  • To serve a larger group, double all of the ingredients and bake the cobbler in a deep 13 x 9-inch pan.
