Ingredients
1 ½cupsall-purpose baking mixsuch as Bisquick
1 ½cupsmilk
5eggs
1teaspoonsalt
3dashes of hot saucesuch as Tabasco
½lb.roll sausagesuch as a bulk pork breakfast sausage
12ouncesgrated Cheddar cheeseabout 3 cups
12ouncesgrated Monterey Jack cheeseabout 3 cups
24 ounce cans chopped green chiles, drained
14 ounce jar sliced pimento, drained
Instructions
Brown sausage in skillet until no longer pink; drain.
Preheat oven to 350°F (180°C). Spray a 9 x 13-inch baking dish with cooking spray and set aside.
In a large bowl, whisk together baking mix, milk, eggs, salt, and hot sauce. Stir in cooked sausage, cheeses, chiles, and pimento.
Pour batter into prepared baking dish.
Bake for 45 minutes, or until golden brown and cooked through.
Allow to cool for 15 minutes before slicing into bite-sized squares. Serve immediately, or wrap tightly and store in freezer or refrigerator until ready to use.
Notes
Note: These are delicious served at room temperature or warm. If you make these in advance and you would like to reheat them to serve them warm, just thaw (if frozen), cover with foil, and place in a 350°F (180°C) oven until heated through (10-15 minutes).
