2cupsdiced unpeeled Granny Smith or Golden Delicious apples(about 1½ medium apples)
2cupsdiced unpeeled red apples(such as Red Delicious, Gala, or Honeycrisp)
¼cupgolden raisins
1tablespoonlemon juice
½cupvanilla Greek yogurt, plain Greek yogurt, or sour cream(if using plain yogurt or sour cream, add 1 teaspoon brown sugar for sweetness)
¼cupmayonnaise
¼cupchopped toasted walnuts or pecans
Optional: ½ teaspoon apple pie spice(or ¼ teaspoon cinnamon + ¼ teaspoon nutmeg)
Optional: ¼ cup shredded coconut,toasted or untoasted
Instructions
In a medium bowl, toss together the apples, raisins, and lemon juice.
In a separate small bowl, whisk together the yogurt or sour cream, mayonnaise, and brown sugar (if using). If you’d like to add warm spices like apple pie spice, you can stir them in at this point as well.
Gently fold the yogurt mixture into the apple mixture until well combined.
Cover and refrigerate for at least 30 minutes.
Just before serving, sprinkle with nuts and coconut, if desired.

Notes
Make Ahead: Prepare the salad up to 4 hours in advance. The lemon juice helps keep the apples fresh.
How to Store: Keep leftovers in an airtight container in the fridge for 2-3 days. Stir gently and add the nuts just before serving.
