  • ½ cup old fashioned oats
  • ¼ teaspoon vanilla
  • ¼ teaspoon pumpkin pie spice
  • ¼ teaspoon salt
  • 1 Tablespoon brown sugar
  • ¾ cup milk use any kind of milk, but do not use water – that won’t be creamy enough, and the milk is good for you!
  • ¼ cup sweet potato or pumpkin puree
  • 2 Tablespoons toasted chopped pecans
  1. Combine oats, vanilla, pie spice, salt, brown sugar, and milk in a microwave-safe bowl. Make sure that the bowl is large enough because the milk and oatmeal will bubble up a little bit while in the microwave.
  2. Microwave on high for 2 minutes.
  3. Stir in sweet potato and microwave for an additional 60 seconds.
  4. Stir, allow to cool for a few minutes, and top with pecans before eating.
