Good morning, and happy Sunday! This week included a birthday, lots of fall sports, and some quick weeknight recipes. Youโ€™ll find all of the highlights from the past few days, along with each of our dinners, in todayโ€™s roundup of Our Week in Meals.

For those of you who are new to the blog, Our Week in Meals is where I share a little bit about what weโ€™ve been up to over the past week โ€” as it relates to our dinners each night. This series gives you a glimpse โ€œbehind the scenesโ€ at some highlights from our life, shows you how I balance a busy schedule with feeding my family, and offers a few new ideas for your own weekly meal plan.

Now, letโ€™s back up to last weekendโ€ฆ

Our Sunday was off to an early start — first a walk up the road while Casey ran, and then we headed to Charlottesville for Spencer’s soccer games.

Keith was in charge of dinner on the grill that evening, while I took care of the sides. We had baby back ribs and grilled bbq chicken breast,

as well as the kids’ favorite homemade mac and cheese,

my favorite peach salad, and Ashley’s leftover sourdough bread from the night before.

Let’s chat books! This week I read another Book of the Month pick, You Belong Here by Megan Miranda. This page-turning thriller is set in a picturesque college town in the Virginia mountains, so I especially loved the local vibe. It’s a fun back-to-school season mystery!

The kids returned to school, and I spent a cloudy Monday working in the kitchen.

Gibbs, Keith, and Casey all played golf that afternoon, and then we had a late supper complete with cornflake chicken,

store-bought coleslaw, store-bought baked beans, and a batch of sour cream blueberry muffins.

Thursday was another misty, gray day (not complaining about the cooler temps after the brutal heat the weekend before!). After a morning walk, I spent most of the day at my computer — editing photos and jumping on Zoom meetings.

Keith took Spencer to soccer that evening while I carted the older boys to their activities. I picked a meal that was easy to make in advance, knowing that we’d be eating in shifts: egg roll in a bowl,

which we served with rice and a side of marinated cucumbers.

Ashley and I walked our dogs together on Wednesday morning once the kids were off to school, and then I took Teddy to the groomer for a fresh cut!

We had soccer, golf, and youth group on the agenda, so we had flatbread pizzas for supper at various points throughout the evening. These are quick and easy to assemble individually, so they’re a convenient option for busy nights. This time I added veggies to mine so that it would taste like a shortcut version of my favorite veggie pizza! I love that combo…plus some pepperoni for extra kick. Leftover marinated cucumbers rounded out the meal.

I snuck in a short walk with the dog before the rain started on Thursday morning, ran a few errands, and then spent the rest of the day photographing a couple of recipes.

Gibbs had a golf match that evening in Luray, so he wasn’t around for supper. The rest of us had sheet pan sausage and peppers,

which I served with homemade garlic bread, pasta, and marinara.

The sun was hiding again on Friday! I met Adria and Ashley for Pilates that morning, and then spent the rest of the day at the house plugging away at the computer.

The sun did eventually come out!

Casey and Spencer both had soccer practices that night, while Gibbs had golf and went out with friends. I knew we needed a packable meal that some of us could eat from a cooler on-the-go, and crab rolls were the answer. These are such a hit with my boys! Plus potato chips and fruit on the side…

Teddy turned 7 on Saturday!

We got out for an early walk before heading into Charlottesville for Spencer’s soccer game.

Keith’s parents stopped by for a visit that afternoon, I restocked the kitchen with groceries, and we picked up dinner from The Bavarian Chef so that I didn’t have to cook (or plan anything!).

We had lots of schnitzel, Bavarian pretzels, sausages, and sides. Always delish!

So there you have it, friends — another week of easy meals! I hope that you’ve found something new to add to your own table in the days ahead. Thank you for being here, and have a wonderful Sunday!

    Blair,

Always a delight to read your Sunday email! The sheet pan sausage and peppers look so good, I may have to make them this week. Our grocery store has big bags of what they callfajita mix vegetables in the freezer section. I like to keep one in my freezer for busy nights to save time. No seasoning added, itโ€™s just a big bag of sliced onions and peppers. I think they just named it that to give a suggestion, but itโ€™s so versatile, and a time saver, I use it for a good variety of meals. And it would work really well for this quick meal.

I love your photos, youโ€™re so talented. Thanks for everything you share and happy birthday to Teddy! Have a great weekโ€ฆ

Thanks for your kind words, Kris! We love that sausage dinner — it’s SO easy! I’ve seen a similar frozen blend at our stores…I just need to remember to pick it up. I love shortcuts like that. Have a great week!

Hello Blair , always a pleasure to read your weekly e-mail and what occurred during the week. I like to make the sausage using mild Italian sausage and a medley of frozen peppers and I add my own onions. Delicious. I always have leftovers so my sons will stop by and make a sausage and peppers hoagie! Happy birthday to Teddy!
