Ingredients
½cupcanola oil
4eggs
1cupbaking mixsuch as Bisquick*
½cupgrated Parmesan cheeseI use the powdered kind in the can
½cupshredded Cheddar cheese
1small sweet oniondiced
3cupsthinly-sliced grape or cherry tomatoes
Instructions
Preheat oven to 350°F (180°C). Spray a 9-inch pie plate with cooking spray and set aside.
Place oil, eggs, baking mix, Parmesan, Cheddar, and onion in a large mixing bowl and stir to combine. Gently fold in tomatoes. Pour into prepared dish.
Bake for 40-45 minutes, or until cooked through and golden brown.

Variations For Making This Tomato Pie
Use any type of fresh tomatoes for this pie
Try adding green onions (spring onions) or chives for a stronger onion flavor
Add spices and herbs such as red pepper flakes or oregano
Mozzarella or any good melting cheese such as gruyere would also work great
