Homemade Salsa

This restaurant-style salsa takes advantage of canned tomatoes and adds a little kick to your next get-together or weeknight dinner!

Ingredients

  • 1 (28 ounce can) whole tomatoes, with their juices
  • 2 (10 ounce) cans Rotel tomatoes with green chilies, well drained
  • ¼ small onion, chopped (about 1/4 cup)
  • 1 teaspoon minced garlic (about 1 large clove)
  • ¾ teaspoon kosher salt, plus more to taste
  • 1 teaspoon honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • ½ cup loosely packed fresh cilantro

Instructions

  • Place all ingredients in a food processor, with the tomatoes and onion on the bottom (closest to the blade).
  • Pulse 10 times, then check the texture of the salsa. If you'd like it smoother, pulse a couple more times, checking frequently, until it reaches the desired consistency. Taste and adjust the seasoning, if necessary.
  • Cover and refrigerate for at least 1 hour to allow the flavors to blend.

Notes

Cooking for a Smaller Crowd? You can easily cut the ingredients in half to prepare a smaller batch. The instructions remain the same!
Make it spicier by adding a fresh, sliced jalapeno.
Make it mild by choosing "Mild" Rotel.
