Dorito Taco Salad

This easy Dorito taco salad combines seasoned ground beef, crisp lettuce, beans, corn, cheese, crunchy Nacho Cheese Doritos, and tangy dressing for a crowd-pleasing meal that's perfect for potlucks, cookouts, and busy weeknights.

Ingredients

  • 1 lb. ground beef
  • 1 (1 ounce) packet taco seasoning (or use homemade taco seasoning)
  • ¾ cup water (or the proper amount of water called for on the taco seasoning packet)
  • 1 head iceberg lettuce, chopped
  • 1 small sweet onion, diced
  • 1 (16 ounce) can kidney beans, drained and rinsed
  • 1 (15.25 ounce) can corn, drained
  • 2 medium tomatoes, seeded and chopped (or 1½-2 cups halved cherry tomatoes)
  • 1 ½ cups shredded cheddar cheese
  • 3 cups Doritos Nacho Cheese tortilla chips, coarsely crushed
  • 8 ounces creamy French salad dressing (or Catalina dressing)

Instructions

  • Cook the ground beef in a large skillet over medium-high heat until the meat is no longer pink. Drain off the excess grease. Stir in the taco seasoning mix and water. Bring the mixture to a boil, reduce the heat to low, and simmer uncovered for 3-4 minutes (stirring often), until the sauce thickens. Set the taco meat aside to cool slightly while you prepare the rest of the ingredients.

  • Place the lettuce in a large bowl.

  • Add the onion, beans, corn, tomatoes, and cheese. Toss.

  • Add the ground beef, Doritos, and dressing. Toss gently to combine. Serve immediately.

Notes

Let the taco meat cool slightly before adding it to the salad so the lettuce stays crisp.
Add the Doritos and dressing just before serving for the best crunch.
Catalina dressing can be used instead of French dressing for a slightly sweeter flavor.
Substitute ground turkey or ground chicken for the ground beef.
Romaine lettuce works well in place of iceberg lettuce.
Black beans or pinto beans can replace the kidney beans.
Try Cool Ranch or Spicy Nacho Doritos for a fun twist.
Add diced avocado, jalapeños, or sliced black olives for extra flavor.
To make ahead, prep all ingredients separately and assemble just before serving.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
The Doritos will soften as the salad sits, but the leftovers will still be tasty.
