Dijon Vinaigrette

This easy Dijon vinaigrette is a tangy, slightly sweet homemade salad dressing made with Dijon mustard, vinegar, lemon, honey, and olive oil in just 5 minutes.

Ingredients

  • 3 tablespoons apple cider vinegar (or substitute sherry vinegar, red wine vinegar, white wine vinegar, or champagne vinegar)
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ½ cup extra-virgin olive oil
  • For serving: salad greens of choice

Instructions

  • In a small bowl or large measuring cup, whisk together the vinegar, lemon juice, Dijon mustard, honey, salt, and pepper.

  • While whisking constantly, slowly stream in the olive oil until the dressing is smooth and emulsified. Alternatively, combine all of the ingredients in a jar with a tight-fitting lid and shake vigorously until completely combined.

  • Taste and adjust the seasoning as needed. Drizzle over salad greens and toss to coat just before serving.

Notes

  • Apple cider vinegar is my favorite, but red wine vinegar, white wine vinegar, champagne vinegar, or sherry vinegar also work well.
  • Use freshly squeezed lemon juice for the brightest flavor.
  • For a less-sweet dressing, reduce or omit the honey. Maple syrup also works as a substitute.
  • Add fresh garlic, minced shallot, lemon zest, or fresh herbs for extra flavor.
  • Taste the vinaigrette on a piece of lettuce before adjusting the seasoning. This gives you the best sense of how it will taste on the finished salad.
  • Store in a tightly sealed jar in the refrigerator for up to 5 days. Shake well before serving.
