Ingredients

  • 2 crisp apples, cored and cut into ½-inch cubes
  • 1 tablespoon lemon juice
  • 1 cup halved grapes
  • 1 cup diced celery
  • ½ cup chopped walnuts, toasted
  • ½ cup mayonnaise
  • 2 tablespoons chopped fresh parsley, plus extra for garnish
  • Kosher salt and pepper, to taste
  • For serving: lettuce leaves (such as Bibb, Iceberg or arugula)

Instructions

  • Coat the apples: In a large bowl, toss the apples with the lemon juice until evenly coated.
Stirring together the apples with lemon juice.
  • Mix the salad: Add the grapes, celery, walnuts, mayonnaise, and parsley. Stir gently until everything is coated in the dressing.
Adding the creamy mayo dressing to the bowl.

Notes

  • Toast the walnuts: Bake at 350°F for 6 to 8 minutes, or toast in a dry skillet over medium heat for 3 to 5 minutes, until fragrant. Cool completely before using. Candied walnuts or pecans work too.
  • Make ahead: Make the salad up to 24 hours ahead and refrigerate. Stir in the walnuts right before serving so they stay crunchy.
  • Storage: Refrigerate leftovers in an airtight container for 3 to 4 days. Don't freeze.
  • Lighter dressing: Replace some of the mayonnaise with plain Greek yogurt or sour cream for a tangier flavor.
  • Easy swaps: Use dried cranberries, raisins, or mini marshmallows instead of grapes; shaved fennel instead of celery; or pecans instead of walnuts. Add diced chicken or leftover turkey for a main dish, or a little sliced green onion for a savory touch.
