Ingredients

  • 2 cups Bisquick
  • 1 large egg
  • 1 ¼ cups club soda (a 10-ounce bottle)
  • ¼ cup vegetable oil
  • Optional, for serving: butter, syrup, fresh berries, whipped cream

Instructions

  • In a large bowl, whisk together the Bisquick, egg, club soda, and oil. Don't over-mix the batter. Stir just until the ingredients are combined. You will still have some lumps, which is fine. Let the batter rest while you preheat the waffle iron.

  • Cook the waffles in a lightly oiled waffle iron for 3-5 minutes each, or until cooked through and golden brown.

Notes

Keep the waffles warm while you finish the remaining batches by placing the cooked waffles on a wire rack on top of a rimmed baking sheet in a 200° F oven.
If you don't have Bisquick, this recipe will likely work with other all-purpose baking mixes. I have tested it with good results using Krusteaz mix, but I haven't tried any other brands. Let me know if you have success with other varieties as well!
