4boneless thick-cut pork chops(about 8 ounces each and ¾-inch thick)
Kosher salt and ground black pepper,to taste
2teaspoonsbrown sugar
1teaspoonsmoked paprika
½teaspoonchili powder
½teaspoononion powder
½teaspoongarlic powder
1tablespoonvegetable oil
½cupbarbecue sauce
Instructions
Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper or foil for easy cleanup. Set aside.
Pat pork chops dry with a paper towel.
In a small bowl, combine brown sugar, smoked paprika, chili powder, onion powder, and garlic powder.
Rub the seasoning blend on both sides of the pork chops. Season both sides generously with kosher salt and black pepper.
Heat the oil in a large skillet over medium-high heat. When the oil shimmers, add the chops and brown on both sides, about 3-5 minutes per side.
Transfer the pork chops to the prepared baking sheet. Baste the tops and sides of the chops with about half of the barbecue sauce.
Bake uncovered for 9-14 minutes, or until the pork chops reach an internal temperature of 145°F. About halfway through, baste with the remaining sauce. For a more caramelized exterior, broil for the final 2-3 minutes.
Let the pork chops rest for 5-10 minutes before serving.

Notes
Let chops come to room temperature (about 30 minutes) before cooking for more even results.
Don't skip the sear. Browning adds flavor and seals in juices. If skipping, add 5-8 minutes to baking time.
Use a meat thermometer. Pull the chops at 145°F for juicy, perfectly cooked pork.
Customize the dry rub: Add cayenne for heat, use regular paprika instead of smoked, or substitute a store-bought BBQ blend.
Oven-safe skillet option: Brown and bake in the same cast iron skillet for fewer dishes.
Resting is key. Let chops rest 5-10 minutes before cutting to keep them juicy.
Storage: Refrigerate leftovers up to 3-4 days. Freeze up to 2 months. Reheat covered at 350°F until warmed through.
