Prep Time 5 minutes minutes Total Time 5 minutes minutes
2 cups mayonnaise (preferably Duke's) ½ cup apple cider vinegar 2 tablespoons packed light brown sugar 1 teaspoon Worcestershire sauce 1 teaspoon ground black pepper ½ teaspoon kosher salt, or more to taste ½ teaspoon cayenne pepper Juice of ½ a lemon
Add all of the ingredients to a medium bowl or a large jar.
Whisk until completely smooth.
Cover and refrigerate for at least 1 hour before serving to let the flavors meld. Store in the refrigerator for up to 2 weeks.
Make it your own. More mayo mellows the tang; more vinegar or lemon sharpens it. Season to taste before serving.
Adjust the consistency. For a thicker sauce, reduce the vinegar slightly. For a thinner drizzle, add a splash more.
For a more traditional, sharper sauce , whisk in 1 to 2 teaspoons of prepared horseradish.
Best as a finishing sauce. Spoon it on at the end rather than cooking it down, and use it as a dip alongside pulled pork, chicken, and ribs.
Storage. Keep in an airtight container in the fridge for up to 2 weeks; stir before using. Not suitable for freezing. Makes about 2½ cups.
