An easy 10-minute make ahead bacon and cheese hash brown breakfast casserole.

Ingredients
  • 1 30 ounce package frozen shredded hash brown potatoes, thawed
  • 2.5 ounces cooked bacon diced (about 1 cup)
  • 5 eggs
  • ½ cup Original Unsweetened Almondbreeze Almondmilk
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 8 ounces shredded cheddar cheese
Instructions
  1. Preheat oven to 350°F (180°C). Grease a 9x13-inch baking dish and spread potatoes in an even layer in the bottom.

  2. In a large bowl, whisk together eggs, almondmilk, salt, onion powder, and garlic powder. Pour over potatoes.
  3. Sprinkle with half of the cheese, all of the chopped bacon, and then the rest of the cheese. Cover tightly with foil.
  4. Bake for 1 hour. Remove foil and bake for another 5-10 minutes, or until knife inserted in center comes out clean. Let stand for a few minutes before serving.
