Ingredients

For the Burgers:

  • 2 ounces frozen spinach, thawed
  • ½ of a red onion, finely grated
  • 1 lb. ground turkey (I do NOT recommend using 99% lean ground turkey breast, as it does not have enough fat to create a juicy burger. You'll want to use ground turkey that's at least 7% fat)
  • 6 sun-dried tomatoes, chopped
  • 1 egg
  • ¼ cup breadcrumbs
  • ¼ cup crumbled feta cheese
  • 1 t. dried oregano
  • ½ t. minced garlic
  • Salt and pepper to taste

For Serving:

  • Hamburger Buns
  • Tzatziki Sauce
  • Lettuce
  • Sliced tomato

Instructions

  • Squeeze as much moisture as possible from the thawed spinach.
  • In a bowl, combine the ground turkey with the spinach, grated onion, sun-dried tomatoes, egg, breadcrumbs, feta cheese, oregano, garlic, salt and pepper (to taste). Stir everything until it is evenly combined.
  • Shape the turkey mixture into 4 equal patties.
  • Cook the burgers on a stovetop grill, in a nonstick skillet, or over an open flame for about 5-7 minutes per side over medium-high heat.
  • Serve burgers on buns and top with Tzatziki sauce, lettuce and tomato.

Notes

  • Cooking just for two? Cut the ingredients in half to prepare two burgers, or freeze the leftover patties for another meal.
  • You can swap out the ground turkey for ground chicken or ground beef.
  • For a lighter meal, serve the patties (without a bun) on top of a Greek Salad. Add a dollop of Tzatziki sauce on top!
