Whole Grain Cinnamon Raisin Pancake Poppers with Maple Glaze

Ingredients

  • 2 cups whole grain pancake mix
  • 2/3 cup water
  • ¼ cup sugar
  • ¼ cup applesauce
  • 1 egg
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup raisins

For the maple glaze:

  • 1 ½ cups confectioners' sugar
  • 1/8 teaspoon maple extract
  • ¼ cup milk

Instructions

  • Preheat oven to 375°F.
  • For Batter: In medium bowl, stir together pancake mix, water, sugar, applesauce, egg, cinnamon, and nutmeg until blended. (Do not overmix.) Fold in raisins.
  • Spoon batter into lightly greased or paper-lined mini muffin pan.
  • Bake about 10 minutes or until toothpick inserted into center comes out clean.
  • Allow muffins to cool completely.
  • For Glaze: In a small bowl, combine confectioners' sugar, maple extract and milk; stir well. Dip tops of muffins in glaze. Allow glaze to set before storing in air-tight container.
