  • Preheat oven to 350°F (180°C). Spray a 9-inch pie plate with cooking spray and set aside.
  • Place oil, eggs, baking mix, Parmesan, Cheddar, and onion in a large mixing bowl and stir to combine. Gently fold in tomatoes. Pour into prepared dish.
  • Bake for 40-45 minutes, or until cooked through and golden brown.

Variations For Making This Tomato Pie

  • Use any type of fresh tomatoes for this pie

  • Mozzarella or any good melting cheese such as gruyere would also work great
  • Add cooked bacon or ham
